Thanks for the prayers for my brothers family. They are surviving, lots of people coming and going at the house. The news they got yesterday was that if the insurance company, inspector and permits drag on it could be months before they are back home. Please pray that it's sooner.
Well it's official....we are going to WDW!! All my ADRs are made, hotel, tickets and airfare purchased.

Every time I see your broccoli slaw it reminds me I need to do a trader Joe's run.
Did you use salted or unsalted butter in your ghee? I have a pound of kerry gold salted butter in my fridge, just need to find my fine mesh strainer ( or buy a new one). We threw out a ton of kitchen stuff that we didn't use when we redid our kitchen, including my food saver which would come in handy for freezing stuff now.

Definitely UN-salted butter... Salted butter tends to make the ghee too salty, so all of the recipes I've seen call for unsalted, organic and grass-fed butter if possible. I used my mesh strainer and a coffee filter to filter it out. It worked well - cheese cloth would have been better, but this worked just fine - it just drained a little slower.

So sad about the hives. I had that once. I can't take antibiotics with sulfa in it. It took about 2 days for the hives to go away with the Benedryl.

I did good with eating until last night. Chelsea and I didn't make it home from dance until 7:45 pm. That didn't leave much time. So, I made the kids dinner and sliced up a pear and had some of the TJs Almond Butter (that I picked up last night). Not the best dinner, but I wasn't that hungry but knew I needed to feed myself something. I don't know if my tastes are changing, but before this, you couldn't pay me to eat a pear. I have had 3 in the last week.

I was wondering if you had the olympic bar. I am going to have to go to Play It Again Sports to see if they have any used equipment. The adjustable weights seem like a good idea. I can already do most of the exercises with the 10-15 lb weights. I am going to read through the book again and hopefully start on Monday.

Yes, that is V's allergy - Sulfa. No more sulfa meds for her!

Yes, your tastes definitely do change. Mine have changed so drastically - not so sure about now, but in the last year for sure. There are foods I used to love - foods that used to be trigger foods for me (hello - Doritos...) and I tried them this summer, I cannot taste anything but chemicals in them - they are so nasty to me now. I don't crave them at all anymore - kind of glad I tasted them last summer, every time I crave them, I remind myself how awful they taste and the cravings are gone. So, yes, your tastes will definitey change. Another thing that has changed for me is almost everything is too salty - I can tell when something is over processed and they use too much salt to preserve (hello Jimmy Johns)... Which is why I don't eat there anymore either.

I really like the adjustable weights - I don't know what I am doing to do when I out grow them? I am nearing the end as it is. I know they are expensive new, I was fortunate enough to inherit them when Brian moved to The Netherlands... Actually - Josh inherited them, and I've "borrowed" them from him. :laughing:

Good morning Miss D - loving your updates - thank you for the log! I will probably never touch a straight bar again after I tore a rotator cuff back a long, long, time ago (in my 20's); the doc I went to said our bodies are not made to lift a straight bar really, and dumbbells were actually better as we have to place more emphasis on balance, form, etc. I will try to starting lifting Monday!

Funny about the Christmas tree; we have an artificial one which gives me reason to delay since it doesn't dry out - I usually get to it mid-January; it is so hard to wrap all the stuff back up.

Hope V is doing okay - that is so strange how her system just all of a sudden decided it didn't like the antibiotics.

We are actually having some "cold" days, at least for Texas, the high today and the next few days is in the 40's; nothing compared to you right?

Cannot wait for another post about your trip; keep the Disney magic coming!

What is ghee? I've never heard of it....

Ghee is clarified butter... When a person is doing the Whole30, they are not allowed to have any dairy products - Ghee is the only exception to that and they want you to remove as many dairy properties as you can from it. So, here's the recipe I used: http://thehealthyfoodie.com/homemade-ghee/ I have to say, I just made it the other day and I bet mine is half gone - it's super good homemade. :thumbsup2

Slightly more normal at work and all. I did not get on the bag yesterday, but that has been the only day off. And I'm planning on punching something today. The bag. Punching the bag. Not the people I've been talking to for work. Really. The bag.

I know a pretty good amount about the sugars and additives. I work at a science center, after all, and diabetes runs in my family. It boils down to pure laziness on my part. I'm not the biggest fan of cooking, and although it always surprises me how easy it is I just don't think about cooking less processed foods.

Well, baby steps. and we'll see what the new year holds.

Besides a new stipling/embroidery/quilting foot for my sewing machine. I'm very excited. And if I can ever get to a fabric store to pick up heavy duty needles, I'll be giving it a whirl.

Yah - it's easy to avoid the bad stuff if you know what it is, I think. At least it is for me - rarely am I tempted.

For me, it's just as easy to cook the non-processed foods, even easier most of the time. I remember, once last spring, I made hamburger helper for the family - and I darn near gagged because it smelled so awful in my kitchen for days. It blew my mind that A) they ate it and B) we used to eat it all the time. Icky... I have not made it since.

My sis lives in Mt and she was snowed in on Mon. When ever she post I'm thankful we don't normally get snow. I keep telling my Dh that when he gets out we're moving down south somewhere.

Yah - we get snowed in occasionally too... I don't mind the snow as much as the cold. I wish Josh would move south - he wants to move NORTH (to the lake) when he retires... :eek:

I have allergies to several antibiotics and its not unusual for a reaction to be delayed. The drug builds up in your system and then your body reacts to it. I was on an antibiotic long term for my roseaca and when I changed doctors, the new one took me off of it - until my roseaca acted up again. He put me back on the same antibiotic I had been taking for months and right away I had an allergic reaction to it.

We are having temps in the low teens, single digits and wind chills of -20. I hate winter, hate being cold, and cannot wait to go to Florida in 2 weeks. With my luck it will be a record cold spell while we are there.:rotfl2:

I never did get back to you with an explanation of the South Beach diet - it is basically a low carb, high protein diet. It starts off with 2 weeks of no (or extremely low) carb level - lots of eggs, meat and veggies, although carrots and white potatoes are not permitted. Diet drinks are permitted, but I've really been limiting the amount of diet soda that I drink. C and I did the 2 week part several years ago and I lost weight and inches (I was working out at a local Curves at the time). I also stuck to the eating plan fairly closely until the holidays (I started in June), although I didn't lose much more weight. I wasn't working out much either.

So fast forward to today - I've been "clean" eating since Sunday. Eggs for breakfast, huge salads for lunch, with a protein added - this week has been leftover chili, and dinner has been meat and veggies. I can have a sugar free popsicle or fudgesicle for a treat - or sugar free candy, which I don't have.

I put all of the cookies that Kate and Shannon made for the holidays in the freezer, tossed all the leftovers in the fridge, and have not really been having too many cravings. I know the cravings will diminish as the 2 weeks go on, so if I can perservere through, I will be happy.

Since our gym closed unexpectedly, I haven't had anywhere to work out. I'm just not motivated enough to do it on my own at home. So I rejoined Curves. It is on my way home, so I can stop after work. I did my first workout today and left sweating.

I hope V's hives clear up soon. They definitely are no fun.

I buy almond butter at Trader Joe's, too. I keep a jar of it at work. It is great for mid-morning snacking. And it is healthier than peanut butter.

I'm so sorry V. is so sick. I hope the hives start to go away and someone came figure out why she reacted that way. My daughter is allergic to penicillum and sulfa drugs so I've sort of been in your position. Lucklly she's never had that severe reaction.
I hope Allie's okay, too. You've got your hands full with two sick girls even if they're teenagers.

Yesterday was crazy for me too...

I took Alli to the Dr, it appears she has a virus... Nothing they can do for it, but let it run it's course. :confused3 She went back to school after the Dr. to finish out her day.

I came home and went to work... I managed to finish my applique. Phew!

Gus picked Alli up from school and they hung out here after.

Victoria and Allison are both back to school today... Hopefully that goes well.

No big plans for the weekend... Hopefully we can get the closet finished up. :thumbsup2

One of my favorite childhood stories was a book called "Little Black Sambo", which has been changed to Little Sambo to be politically correct. ;) Anyway, the tigers ran around the tree faster and faster until they turned into ghee. Sambo gathered up the ghee and took it home to his mother and she made wonderful pancakes with it. Now I know exactly what ghee is. I figured it had nothing to do with tigers. ;)

Do you find yourself getting less colds than your family gets? I am convinced that a healthy diet helps build up the immune system. And like you, I can no longer eat some of the foods I used to like. They make me feel sick and I have no desire to eat them anymore. It is actually rather nice to have those aversions to the wrong foods.
 
Well, it is kind of good they are back to school. Wish they were 100% better. Marissa came home with a fever and cough and runny nose yesterday. She flies to Texas tomorrow for the Championship game, so tonight we will be raiding the drug store so she isn't miserable on the flight.

I decided to do a little Disney planning. My next "family" trip to Disney is scheduled for 2018 - 3.5 years away. So, I set up a projected budget. Then I scheduled my credit union to take a certain amount per pay period for the rest of 2015 and stick it in my savings. I will reassess at the end of the year and set up another one for 2016. I am still hoping to win a free trip though.

I am hoping your day goes a lot better for you today.

I've fallen behind on reading but am so glad that everyone is on the mend. Allergic reactions like that can be scary! Thanks for the ghee recipe. I'm going to check it out. I just started using it a bit for my son. He is 11 and has Crohn's Disease so he currently eats gluten/dairy/corn free. (We do it more based on advice from a nutritionist so it is ok allergy wise if he has a slight amount of dairy.) I'm always looking for ideas!

Loved that story Sue... I highly recommend everyone makes and eats ghee... I know that it's now a staple in my life, I am eating it on everything to get my fats in. I used to love Coconut oil - I still do - but it just doesn't go well with certain things, like eggs and some veggies/meats... The ghee is amazing with those things.

Most of the time... This has been an unusual year for sickness for us... It seems like the girls are constantly down with something. So far, I feel like I am sick less than they are... I do agree with you though - I do feel like diet plays a huge role in our health. Which is one of the main reasons I am so happy that Alli is eating meat again... Sadly, I think her body was so "bad off" (can't think of a better term right now) that she is still trying to catch up. It's going to take her a long while. I do know, once she is back to feeling better, she plans to eat more Primal/Paleo like I do.

So...

Miss V is mostly all better... Picture to prove it... Sadly, she had to deal with the allergic reaction to the Sulfa meds, but on the up side - the sulfa meds took care of her acne... Which is a GREAT side effect! Now her Dr. and us are trying to keep it this way... Her confidence is through the roof right now! :banana:

Alli is not so much better... As I said yesterday, she has a virus... Well Mono is going around school, and she somehow managed to get it. :( Poor kid... According to what I've read... She will need to sleep 12-18 hours per day - on top of how painful her lymphnodes are right now, because they are all huge in her neck, and her throat is super inflamed. I guess, it takes 4-7 weeks for symptoms to appear after you've been exposed... So trying to narrow down exactly how she got it is almost impossible. :confused3 Sadly - you are contageous before symptoms appear... So, it's only a matter of time before Gus gets it. And most likely V and I too - because we share eating utincils/straws/food all the time. :eek: :headache: During this time, she can continue to work, go to school, all of the above... According to her Dr. we didn't even have to notify the school that she has it - but we did. So continued prayers for Alli that she is able to rest enough that her recovery is quick... And for the rest of us, by some miracle, we didn't get it. :grouphug:

On to more fun and well, fun things. Hehehe...

Yesterday was a banner day for me in my journey... I am finally in single digit sizes! :woohoo: When I started my journey - my initial goal was a size 13, with an "ultimate goal" of a Size 8... Well, yesterday, I wore a pair of size 8 American Eagle jeans out in public (with medium tops)... I've reached the top of my ultimate goal size. Sadly (as I've mentioned in my blog before) - I don't see myself as this size yet, and what I do see in the mirror does not impress me. I don't want that to sound bad, but when your body changes, there is a huge delay there (the same thing happens when you get bigger) - my mind is really lagging behind my body at the moment. Eventually, I will see it, I just don't see it now. Besides that... I am at the top of the size range I want to be in... I'd really like to be more consistant than that, so I would like to be a bit smaller, I'd like to be able to fit in a size 8 anything. Then... I am not happy with my body compostion... So, I would like to continue working on that = more muscle, less fat - you know.

Even though I am "almost there"... I have no intention of quitting, changing my life or how I eat. I plan to keep going and keep trying to make myself better. If my body decides that it wants me to be smaller than this, then I am OK with that. I did not lie when I said I enjoy this lifestyle and this way of eating, so I will keep pressing on and accept the changes that come with it.

She is so radiant these last few weeks, and I love seeing her so happy and confident with herself. :lovestruc And then, there is Josh with his full beard - which I also love! :rolleyes1

No big plans for the weekend... It's almost 8am and the entire family is still sleeping. I suspect Allison will sleep most of today, as she has to work tonight.

I am hoping Josh and I can get some work done in the kitchen... I plan to run to the hardware store to get the matching red paint for the red walls, so I can at least get the HUGE white patches covered - once that is done, I can start shopping for the Valentine's Mantel I want to create... The mantel is quite bare right now. :rolleyes1

Otherwise, it will be a relaxing day for all of us.

Poor Alli. Having mono sucks. I hope she gets all the rest she needs. V. looks so happy in those pictures and I'm glad her hives are almost gone.
My daughter may have a new job starting the 19th. There was an opening where one of my closest friends and her husband work and they offered it to my daughter. She's waiting for the backround check to come back. It's computer work and no heavy lifting which is perfect for her.
It's been slow at work so we've been replacing labels and resetting everything so it's back to where it was
before we plugged stuff for Christmas.
The co worker that was helping me came from the other mart and works at a motorcycle dealership during the day. He did better on the other movie fixture.

Glad to hear V is doing better - Sulfa is one of the drugs I'm allergic to also, mycins, and cyclines are the other types of antibiotics I can no longer take. My reactions though were not nearly as bad as V's.

So sorry to hear Alli has mono - that's really a bummer for her and you too.:hug: for all of you.

I wanted to share my news - although I don't want to make you feel badly...

We've been talking about a family reunion trip to Disney for over a year now and I finally got people to commit/not commit to going.:woohoo: Our huge family trip has been narrowed down to 6 of us - Jim and his gf, Karen, my son & dil and C and me. We're going in September again. Since Jim is retired military, he can get the military discount tickets. I'm going to give him all the details this afternoon when I go over to watch the Ravens game.

We promised my girls we would take them next summer (2016) since they can't commit to September this year because of work/school.

And, since I want to see the Christmas decorations - which I've never seen, C and I are going in December this year. Is this Disney overload? I don't care :cool1: I'm excited!
 
When you mentioned the swollen neck thing, I had a sinking suspension it was Mono. I had almost mentioned it, but didn't want to bring undo concern. I had it at 16. Good news is that noone else in my family got it. I got it at the end of the school year. Finals week really was not good (mid June). I remember trying to go out to breakfast for Father's Day, but having to be carried out of the restaurant because I didn't have the energy to stand anymore. I had very little energy that entire summer. I lost 20 pounds and often joke that mono is the best diet there is. I heard that stress is a huge factor with mono and the more stressed you are, the better chance to get a relapse. I have been mighty stressed in my life and have never had it since.

She'll get over it, but there are going to be some really rough days.

Congrats on the size 8! That is my ultimate goal as well. I know about the mind thing. When I have been at my smallest, I still look in the mirror and see where every roll is. When I was a size 2 in college, I still thought I was fat and wouldn't wear a swimsuit in public. I think the head issue is what gets me. I can't see the results in the mirror, because my head still focuses on all the "bad", so I give up. This time, it isn't about the scale or the size, but being healthy. I have to keep telling myself that.
