In my search for a bean and rice dish that I had at Boma about 1 year ago, I was given these recipes by the restaurant and thought that I would share them here. Enjoy!

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

AFRICAN RED BEAN STEW
Boma – Flavors of Africa
Disney’s Animal Kingdom Lodge


Yield: 8 servings

Ingredients

1 pound Red Kidney Beans, soak overnight
2 ounces Vegetable Oil
1 pound Red Bell Pepper, diced
1 pound Green Bell Pepper, diced
1 pound Onion, diced
1 pound Tomato, diced
1 ½ teaspoons Ground Cumin, toasted
1 ½ teaspoons Curry Powder, toasted
2 tablespoons Crushed Red Pepper
1 pound Carrot, diced
To taste Salt and Pepper
2 quarts Vegetable Stock (V-8 Juice)



Method of Preparation

1. Soak beans overnight.

2. Cook the beans in the water until 2/3’s done.

3. Heat oil in pot and add vegetables, spices, and vegetable stock.

4. Adjust seasonings.

5. Continue to cook until all vegetables are done.

ASPARAGUS AND BEAN SALAD

Yield: 8 servings

Ingredients

1 pound Asparagus Spears, grilled
3 cups Olive Oil
Salt and Pepper
1 each Red Bermuda Onion, sliced and grilled
2 pounds Scarlet Emperor Beans
1 each Red Bell Pepper, small diced
1 pound Tofu, firm and cubed
1 cup Rice Flour
Salt and Pepper, Cayenne Pepper
¼ cup Cumin, toasted
1/8 cup Coriander Seed, toasted
1/16 cup Montreal Seasoning
1 each Jalapeno Peppers, seeded and minced
1 cup Sherry Vinegar
2 cups Olive Oil
½ cup Sugar


Method of Preparation

1. Clean and coat asparagus with olive oil, salt and pepper. Grill and chill. Cut each spear into bite size pieces.

2. Take onion and slice into thick slices. Coat with olive oil, salt and pepper, and grill.

3. Cook beans in salted cold water according to package directions. When beans are tender, drain and chill. Set aside for later.

4. Wash, seed, and rib red pepper and small dice.

5. Take chopped tofu and dust with rice flour, salt and pepper, and cayenne and deep fry until golden brown. Drain on paper and set aside.

6. Make vinaigrette with Montreal Seasoning, jalapeno, and sherry vinegar. Slowly whisk in the olive oil and adjust with salt and pepper.

7. Mix all ingredients in a pan except for the tofu. Let all ingredients marinate. When time for service, place salad in bowls and top with fried tofu.

BLACK EYE PEAS
WITH GINGER SOY JUICE

Yield: 8 servings

Ingredients

1/8 pound Black Eye Peas (raw, soak overnight)
1/16 cup Safflower Oil/Vegetable Oil
1/8 pound White Onions, diced small
1/8 quart Ginger Soy Juice
1/16 pound Spinach, julienned



Method of Preparation

1. Cook the black eye peas with water, salt and pepper. Drain and let cool.

2. Heat oil in sauté pan. Add onion and black eye peas, stirring constantly.

3. Add ginger soy juice and continue stirring. Add spinach just before serving.



GINGER SOY JUICE

Yield: 3 cups

Ingredients

1 cup Soy Sauce
1 cup Granulated Sugar
1 ½ cups Water
6 tablespoons Fresh Ginger, finely chopped



Method of Preparation

1. In a stainless pot, heat all the ingredients until it boils. Let simmer for 20 minutes.

2. Strain the juice through a China cap. Let cool.

THREE BEAN GUMBO
WITH SAUSAGE

Yield: 8 servings

Ingredients

½ cup Kidney Beans, soaked overnight
½ cup Black-Eyed Peas, soaked overnight
½ cup Pinto Beans, soaked overnight
1 quart Chicken Stock
1 quart Beef Stock
1 – 8 ounce can Diced Tomatoes
1 t. Worcestershire Sauce
1 ounce Basil
2 t. Cajun Seasoning
1 t. Thyme
2 T. Granulated Garlic
Roux (1/2 cup Flour and ½ cup Butter)
1 each Green Bell Pepper, diced
1 each Red Bell Pepper, diced
1 small Red Bermuda Onion, diced
1 small Spanish Onion, diced
½ cup Okra, sliced
½ t. Cayenne Pepper
½ pound Sausage, sliced
1 each Bay Leaf


Method of Preparation

1. Cook the beans with water.

2. Heat chicken and beef stocks.

3. Add tomatoes, Worcestershire Sauce, basil, Cajun Seasoning, thyme, and garlic. Let boil for 15 minutes.

4. Add roux and continue cooking for 20 minutes (until thick.)

5. Add pre-cooked beans and the rest of the ingredients. Let simmer until veggies are tender.
 
Thanks for sharing! I hadn't seen two of these. We'll have to try them soon - my family loves just about anything from Boma! :teeth:

JOLLOF RICE

Yield: 16 servings

Ingredients

16 ounces Chick Peas/Garbanzo Beans. wash off brine
16 ounces Kidney Beans, wash off brine
2 quarts Coconut Milk
2 quarts Water
2 pounds Onions, diced chunky
Canola Oil
2 ounces Ground Turmeric, toasted
2 ounces Ground Coriander, toasted
2 each Cinnamon Sticks
4 quarts White Rice/Jasmine/Basmati, washed
8 ounces Sugar
1 ounce Chopper Cilantro
To taste Salt and Pepper



Method of Preparation

1. Heat oil and sauté onions. Add turmeric, coriander, and cinnamon sticks.

2. Add rice, coconut milk, and water.

3. Add sugar, salt and pepper.

4. Continue stirring, and add more water as needed until rice is cooked.
