3 Parks in 2 Days?

We are squeezing a couple of Disney days into our Florida vacation; we'll be there next Sunday and Monday, the 15th & 16th. We have park hopper tickets and are staying off site with a shuttle service. It's our second Disney trip.

Currently, we have MK set aside for Monday. Other than the calendar boards having MK red for both days, I think we have a plan for that that's doable.

As for Sunday, we loved Everest at AK, and would like to be able to ride that a couple of times, wander a bit there, maybe do Dinosaurs and/or the safari. We thought we'd plan for Epcot in the afternoon. Can you recommend how to handle our schedule and FP's for AK & Epcot in one day?
 
Not knowing the shuttle times makes planning hard. We used a shuttle one stay and we will never do that again. They do not run like Disney. Like in a round about way but at a set time?

Can you make a rope drop at AK. ..?

You can make fp 30 days before you arrive. Fps ee, dinosaur and safari don't forget festival of the lion king

I would get to AK for RD to maximize the amount of time you'll spend there. Do EE, KS, Dinosaur, and a walking trail or two and then head out. Schedule your FP+ for Epcot, trying to get the first one for right around the time you'll be entering the park. Opt for Soarin' over TT (if you're interested in both) as TT has a single rider line to cut down on wait time. After using the initial 3 FP+ you can book a 4th if so desired.

Also, check out the shuttle times at your resort. Some of the off-site ones have really strange times (ie: first bus doesn't leave until 9am, last bus to return from Epcot departs at 6pm, etc). A taxi might serve you better here.
 
Husband says we'll just drive to parks and he can drop us off at gate to get spot in line. He's a good runner :)

Are the sites that have the crowd estimates accurate? We used Travel Guide Mike the last time, and he was spot on, but I guess he's not doing it anymore.

I find them to be accurate and like EasyWDW.
