2TS dinner- worth it? how?

DBF (22) and I (21) will be in the World Jan 4th-10th (6 nights) on the dining plan, staying at POP. It'll be his first trip, my third (week as a child, day-trip to MK a couple years ago). This is our first big vacation together and I want to show him what makes WDW special and not just a regular amusement park or "kids stuff." I had six TS meals planned out (plus an OOP breakfast at Kona to try the tonga toast!) as per the dining plan, but now I'm wondering if it'd be worth it to try one of the 2TS places, possibly the California Grill. As of now, these are our planned TSs:
- Les Chefs de France (lunch, arrival day)
- 50s Prime Time Cafe (lunch)
- Teppanyaki (lunch or dinner, DBF's request)
- Kona Cafe (last breakfast seating, as brunch after MK EMH)
- Restaurant Marrakesh (dinner)
- Le Cellier (lunch or dinner)
- Boma (dinner)
As I see it, if I want to do the nicer dinner, I have a few options:
1) skip two of the above and replace w/ 2TS
2) skip one of the above and share/buy a little extra OOP at two
3) share/buy a little extra OOP at four of the above
4) skip one of above and share at the 2TS
5) share at two of above and at the 2TS
I am a vegetarian and he isn't, so sharing isn't as easy as it would be for some. One thing I was thinking is that maybe for lunch at 50s, I could order off the kids meal for 5 bucks and he could use a voucher, and I could just share some of the appetizer and dessert (or even order my own dessert if he doesn't want the s'mores... lol). Any advice on whether it's worth tweaking the plans to fit a fancy dinner? What are your suggestions to make it work if it is worth it?
 
You have alot of great restuarants picked that only require 1TS. I would strongly suggest Hoop DEE DOO review if you are gonna use 2TS for something. We loved it!!!!!!!!!!!!!
 
We shared a couple of meals and paid out of pocket for a counter service dinner one night to even out the credits to cover our California Grill night.
 
If he isn't a big eater, you could share more easily than you think. Many of those TS' have good salads/veggie choices for appetizers. I think you could share more in those area by getting an appetizer you would eat and letting him get the entree, or even just ordering an extra appetizer and splitting the TS.
 

WE always do a 2ts and pay for a breakfast, It's nice to have a special meal.
