I love this thread. I've been working from home since March 2020 and lunch has become what I can scrounge from the kitchen and not always healthy. Maybe this will keep me honest. Today was Turkey on low carb bread with an orange.
Today's lunch was nothing special - just some tuna salad with potato chips, so I'm choosing to focus on yesterday's lunch, which was a yummy homemade veggie noodle soup.
Today was cold roast chicken sandwiches and a mixed fruit salad. Tomorrow will be left-over beef stroganoff. DS wasn't home for dinner so I won't let his portion go to waste.
I love salad. I don't eat it for lunch. I eat a big lunch while I am physically working and eat a salad at home for dinner as I don't need the fuel for the few hours I'm home not doing much.
It's not working how I want it to work though. I have to stand on a packaging scale once an hour to package off material so see my weight every hour 5 days a week and that weight isn't going down at all with the salads, LOL.
I had a conference call during my lunch time today, so I ate a yogurt before (so I wouldn't be starving on the call) and a piece of leftover pizza after.
More leftovers - none from last night, so I finished the homemade carrot soup. Since there was no more leftover French bread, I had an individual bag of plain potato chips with it. I'll be finishing lunch with an apple or banana.
