Anyone else officially running other than me?? I did 5 miles today....
 
I am pretty much done posting pictures! Well... I still had the last day to add.... but my laptop is in the shop. Luckily I was able to back up all my pictures before it died on me.

Celeste, Jeff and I are both running/ walking the half marathon. Of course it's been so bloody rainy and humid here we haven't been able to train much...

To everyone else - Hope everything is going well for everyone! I've been working hard training for the California Coast Classic bicycle event. It's a charity bike ride from San Francisco to LA in September to support the Arthritis Foundation. I'm trying to raise $5000 this year. I'm almost there - $4650 so far. I think I'm going to start having bake sales at my office each week. That could put me over the top.

Maybe I should raffle off my repo pins (I don't think so!)

I really didn't talk a lot of each of you, but what I did meant so much to me and Harry - hope not too distance in the future a great deal of us can get together again. I am sure it just might happen - because - we will make it happen.

Did anyone hear about the package that was left on Monorail Pink (going to Epcot) I think - it was on Monday?? I understand they had to get buses to take everyone from TTC to MK because of it - The Monorails were closed for a while because of it

I was there but in a different location.

Maybe Jeff and Jenn know something about it

Kay, I think we all know what ya mean. This is a pretty special group of folks for sure.

Work has kinda slowed down, so I have a little bit of breathing room. Great to hear all you guys are training. I need to get it in gear and get a little more serious myself. Yesterday it was Too Hot here to go for a dog walk. It was 87 at 9:00 PM last night. That is HOT HOT for us mountain folks here in WY.

Thanks So Much to all you guys sharing your pictures, they are great, good photographers out there for sure.
 
87 degrees at 9 pm. OM goodness. And probably no breeze??

I also noticed that some of us have booked for the Cruisetoberfest IV 10-14-2006 cruise. Anymore takers??

I had heard that it was going to be 103 degrees in Billings, Montana yesterday....I believe that is close to Jackson. (somewhat) That would probably feel like 115 degrees here.


Kay- you are right. We did travel with a special group. Robb and I have both voiced concerns that we will feel let down with future cruises....we will all have to try to cruise again.

It also makes me sad that there aren't more people posting. I am tempted to go back to the older pages and start PMing everyone and tell them to come back!!!

Robb comes back from Finland tonight! yeah!
 
Maple Glazed Salmon with Onion Mashed Potatoes
From: the Disney Cruiseline Section of Cooking with Mickey and the Disney Chefs by Pam Brandon...published 2004 by Disney Enterprises, Inc. (there's the legal stuff) I bought this book at WDW and I just checked to see if it could be purchased on Amazon- it cannot. I will be in WDW in October if someone wants me to pick up a copy for them and mail it.

Maple Glaze:
1/4 cup brandy
1 1/4 cup maple syrup
1 tablespoon cornstarch mixed with 2 tablespoons water

1- Place the brandy in a pan, ignite, and flambe for 5 seconds
2- Add the syrup and heat.
3- Whisk in the cornstarch mixture, and simmer 5 mintues, stirring. Cool to room temperature.

Salmon:
4 Salmon fillets (7 oz each)
Olive Oil
Coarse Salt

1- Preheat the oven to 350 degree F.
2- Brush the salmon with olive oil and season with coarse salt. Place in a preheated saute pan and sear both sides.
3- Place on baking sheet. Drizzle 1 tablespoon of the Maple Glaze on each salmon fillet. Place in preheated oven for 12 to 15 minutes, or until desired doneness.

Onion-Mashed Potatoes
2 med. onions roughly chopped into 1/2 inch pieces
2 tablespoons olive oil
2 pounds red potatoes
2/3 cup milk, warmed
2 tablespoons unsalted butter
coarse salt and freshly ground white pepper, to taste

1- preheat the oven to 375 degrees F.
2- Toss the chopped onions with olive oil and place in oven for 15 minutes, until soft. Pruee onions in a blender.
3- Cover potatoes with water in a medicum saucepan and boil until tender when piereced with a fork.
4- Strain off the water and place the cooked warm potatoes in a mixing bowl. Add the remaining ingredients, and mash with an old-fashioned potato masher.
5- Add milk, butter, and salt and pepper to taste.


Konk Kooler

1/2 oz dark rum
3/4 oz light rum
1 oz passion fruit juice
1 oz pina colada mix
1 oz orange juice

1- Place all ingredients in a cocktail shaker and shake vigorously
2- Serve in a tall glass filled with crushed ice. Garnish with a wedge of tropical fruit.

I will post the Panna Cotta later...
 
At the moment in London where I am the temperature is 89 ,now that is hot when most places have no Aircon.Luckily my office and cars do.

Hey guys,

Guess what? Our power lines got hit by lightening last night! It was a huge BOOM! I'd turned off my 'puter before the storm got over us, but Eric didn't think we needed to because we had a good surge protector.... NOT! It fried his internet connection! Poor guy, he's got to share with me for now... If you need to get hold of him for the time being, either PM or email me and I'll make sure he sees it. Summer in Orlando is a riot!

Brandy???? That's what makes it taste so good? Uh... where can you get cooking brandy in really small bottles? Is there a brandy extract that can be used?

Same question for that heavenly bourbon glazed pork tenderloin an pecan pie... I've never cooked with the stuff, and don't have a clue!

Hi Renae,

If you need brandy I can pick you up a little tiny bottle. We only have state run liquor stores here in New Hampshire but they have tons of tiny bottles of booze. Right now it is 78-80, very comfortable.

The final 4 cabinets for my new sewing table have arrived, so now i can build the top and my sewing room will be finished. It will be so cool to get back to sewing and learning my new craft of scrapbooking..
