Alright, I am curious.

1. If someone cancels an early morning reservation last minute (such as the night before), will these show up in the ADR system as available? Or does one need to walk up and ask if something has opened up? Or call Disney Dining?

2. If one is running late for a reservation (such as getting caught in a crowd), is there a short grace period of time after the reservation time is passed before the no show charge is applied? Or would one need to call Disney Dining and let them know about the delay?

From what I've read, cancelled ADRs should show up almost immediately in the system as being available. Checking online or calling Disney Dining should (in theory) get you to the same list of available ADRs.

There is no set policy on grace periods for ADRs. The most common time lengths I've heard is between 5 and 15 minutes, but it can vary by CM and restaurant.
 
As far as being late goes, keep in mind that Disney asks you to be at your ADR 15 minutes before the given time. Don't try to fit in just one more ride if you can't do it without being late. If you are late and they won't seat you, you also have to pay the per person no show fee.
 
I've been seated late in the past -- we arrived 10 minutes late due to a typo on our plan sheet -- and were seated with no issues.

In terms of a much bigger stressor, we also managed to squeeze in once being like 35 minutes late (we were meeting my parents coming over from Fort Wilderness and the first boat didn't get them there until after our pre-rope-drop ADR) -- however, *that* was under the old (non-CC hold) policy, and in February when it wasn't busy..... and I think the fact that my wife and I kept checking in and were clearly going insane waiting for them may have helped.
