Two it would depend on when you are going as to what to hit up at Epcot. I'd get there at rope drop and do Soarin if it's open, then the land (I can't remember if you listen to it or live with it now they have changed it) then The Living Seas, even if you don't ride the ride the aquarium is beautiful, hit Spaceship Earth and if it's 11 by then, at least walk through WS, maybe picking up lunch there. If your wife doesn't like thrill rides I'd skip Mission Space and Test Track. Then head over to MK. Anything in Fantasy Land is going to be a non-thrill ride so hit that first then head over to Pirates, Jungle Cruise, Swiss Family if it's open. I'd skip all the mountains since while not huge roller coasters, might be counted as thrill rides. In FutureWorld, Carosel of Progress and People Mover are easy. Then you can fill your night in with grabbing something to eat and shopping on Main Street before the parade and Fireworks. Again, depending on when you are going MK's closing time can be a moving target so it's possible it could be open after the FWs. If you are there during F&W, Epcot might take up more of your time because they have food booths spread all around WS. I'd do the FPs at MK, you can pretty much hit everything I've listed at Epcot on standby if you hit rope drop and it's entirely possible you can hit those and be done by 10, in which case you are going to have to either hit another ride or two or sit for a cup of coffee or shop at Mousegears (my favorite) until WS opens at 11.
