Last May, maybe for just a trial period, we were allowed to have 2 fastpasses at Epcot. Is this still the case?

If you mean 2 FP's with approximately simulateneous time windows, this generally doesn't happen.

However, I've been able to get FP's on one ride, and when the time window was still active but about to expire I was able to get another FP. I don't know how WDW's programming works with this, but I'm assuming the less popular FP rides will probably have a more lenient time window of when you can get FP's while another FP's window is still open.

According to what I have been told, no. That experiment as been discontinued, although it or something similar may resurface temporarily during less busy times.

Other things* that have existed in the past have been:

1. On less busy days, ability to get a fast pass for less busy ride well before the time for doing so on the fast pass you already have,

2. On less busy days, the maximum time for next fast pass being as little as 45 minutes rather than 2 hours 5 minutes.

This must have been what I've seen at times. I usually try to work the least busy park days of each park into my schedule. I didn't realize they did this before, but I have definitely had this happen before.
