2 Day plan - which way

We have 2 full days in November. We were just there in August so there is not need to do it all. Its just me and my DD 8, we will get Genie+ both days. She LOVES HS so that is where we are focused, she said she wants to do all her favs twice. Rides to do Twice at HS are: Rise, RnR, ToT, MMRR she has said she is ok skipping SDD and Aliens, I would like to do TSMM twice. She does was to do Star Tours and MFSR at least once. She also would like to do Guardians at least once, but ideally more, she would also like to do Ratatouille once, I mean tall order girl!.

SO my question is on day 1 which is better:

Option 1: Starting at Epcot, doing VQ and ILL for Guardians, and Ratatouille LL, lunch maybe a pool break and then HS with some stacked LL, and ILL for Rise, and short waits till close, if Fantasmic opens before we go she has been asking to see that, so i think that would push us to this option.

Option 2: Start at HS, get there for Rope drop do rides with short waits, ILL for Rise, get as much as we can do, early lunch maybe a pool break and then Epcot with ILL for Guardians and if I was able to get it a LL for Ratatouille.

Day 2 is pretty set, we will rope drop HS and get lunch at Hollywood and Vine (1:15), and then hop to MK for the Christmas party, so I am trying not to go to hard on Day 1 so she makes it up a bit later on day 2, but we can sleep in the next day, so i am not to worried.

Which would you do? If I can get Hollywood and Vine on Day 1, I think I would do HS all day 1 doing everything she wants, calling it and night and starting day 2 in Epopt and then hoping to the Christmas party but I haven't been able to get that meal for Day 1 yet. _ we can call this hopeful option 3

I guess I'd stick with option 1 to get Guardians and LL for Remy and if you couldn't for some reason, perhaps you could squeeze it in on day 2 before the party but with H&V, although it would be tight. Even with G+ both days, it might be hard to get in all those headliners twice. Might have a few long waits that can't be avoided if you can't get return times that work for your schedule. I already prepared her that it’s very possible we don’t get to do it all, and she is ok with that, and understands, her priority for 2 rides I think with a rope drop is probably do able for tower and RnR…. The rest I am not sure
