I have booked a 11:35 ADR for breakfast, so we can hit MK then head over. How long will we have to eat if it closes at 11:50? Will we be able to sit, relax, eat and see the characters??

You will not be rushed out. 11:50 means their last seating. You will get a full hour plus.

1) Yes, to all.
2) But, once the characters have made "a circuit", they are free to leave.
. . . Handlers make sure characters see everyone, then they are released.
. . . Characters do not remain "as long as there are guests eating".
. . . After all, this is a job for the character, and they want to get home. *

* This is not meant to be smart-Alec or snide, but although this is your vacation, this is their livelihood. They can't be expected to work simply because there are folks who want to see them. This is why I seldom recommend people going to places near the end of posted hours. A good example is a person coming up to a Concierge Desk at 9:55pm when we close at 10:00pm and expecting service that takes a lot of time. We make plans and/or have family waiting for us and want to get out on-time.
