180+10 is really 180+length of your reservation, right?

DH and I have a BWV studio reserved for Jan.3. The rest of our family arrives Jan. 4 for a week in a GV (yay!!). July 7 is 180 day mark for the Jan. 3 arrival. Can I make ADRs for 180+10 from that date, or only for Jan. 3 & 4 since we check out of that room on Jan. 4? In other words, will we have to wait until July 8 to make ADRs for the GV week that starts Jan. 4?

You will be able to make reservation until your 1st checkout date. Even though you consider yourself to be on 1 trip- each time you check out Disney thinks you are on a different trip. You have your thoughts correct on the matter.
 
I was able to book for +10 even though we only have a confirmed reservation for +2 and then are waitlisted until +5.

Even had to call to book Tea Room during the waitlisted period and at first the woman said it couldn't be done but I told her I booked BOG online for the day I wanted the TR. She actually tried to book TR and it worked (at first she was just telling me what she "knew" without trying to book it)

Similar to a split reservation where you should be able to book +10 from the initial check-in date.
 
Both last year and this year I had a room only res. and then a package res. Both times I could make all my res. when the window opened for the first res. I made them all online.
 

You can make ADRs for the full 10 days past your first check-in. We're doing a split stay in December and I was able to make reservations for our entire 8 day stay on the 180 day from my first check-in.
