I say go whenever is good for you. You really can't predict how your specific child will be at different ages.
That being said, we just came back from WDW where my DD turned 2 on the trip. It was such a great age - she knew what was going on, and loved the characters! A few months before, she would have been scared. (She met our university mascot)
However, the biggest difference for us was that she had just grown out of the age where she got cranky and fussy when she got tired. During the trip, she was super go with the flow and would just decide to fall asleep on one of our shoulder's when she got tired, which was great because she didn't sleep much on the trip! A month before we would have had a cranky toddler whenever she got tired, but she was never fussy on this trip!
