I just went through this. For my references I used the principal at my kid's school - she knew me well from my volunteer work and I also subbed there. I also used a principal who attends our church. I had taught his kids at VBS and he'd seen numerous Christmas programs, etc. over the course of a decade that I ran because his kids were the same ages as my own. My third reference was the preschool director at our church. I had subbed for the preschool occasionally and am also chairman of the preschool advisory board. Prior to subbing, instead of my kid's principal I used the Pastor at my church - I guess that won't work for you!
If you think about it, you've probably got many of the same kinds of people you can use. It is tough - my college didn't want to send my "Outdated" placement file. Even though I'd kept it reasonably updated they said they wouldn't send anything over 10 years old. Since I hadn't officially taught in 10 years, that would have x'd everything except subbing out of my file! I stayed on their case until they sent my past references.
I only listed my teaching experience on the application. I left "odd-jobs" off of my resume also, but did put in volunteer work that was applicable.
