How is everyone doing tonight?
I got some bad news in an email from my church when I got home: our worship leader, Mary Barrett, a wonderful woman about 46 years old lost her battle with cancer. She was at church leading worship just a few weeks ago; then she left for Nashville to record some songs that she had written and had never been able to record. She got very ill in Nashville, and when she came home she went into hospice. It is just so hard to understand. Please remember her husband, Joe, and her mother in your prayers.

No Carol is with DFW Cruises and she is a DCL specialist and offers great onboard credit and is also available 7 days a week via phone and email. She also helped me out on the California part of my trip for the Mexican Riviera. She booked a large group of people that I am sailing with (maybe) next August to Tortola but I got stuck with Dreams due to a bad decision on my part. Thus, I found Carol and she offered everyone $200 in OBC and has in my opinion been very responsive to any questions I have had.
It's still been quite quiet here today. I decided to be in charge of dinner tonight (I actually do it a lot) and was tired of all the things I usually do and it was a tad nippy to go out on the deck and grill. So I searched for easy crock pot chicken recipes and found a ton of things that have six ingredients or less. I made one today and it was fantastic and probably the easiest thing I have ever cooked..so I thought I'd share the recipe.
1 can (15 oz) black beans, rinsed and drained
2 cans whole kernal corn, drained (i used frozen and just thawed under water)
1 cup bottled thick and chunky salsa - i used our grocery store's homemade salsa which is better than any jarred stuff.
5 or 6 skinless boneless chicken breast halves (about 2 lbs)
1 cup shredded Cheddar Cheese
In slow cooker, mix together the black beans, corn and 1/2 cup of the salsa. Top with the chicken, then pour remaining 1/2 cup of salsa over the chicken. Cover and cook on high for 2 1/2 to 3 hours or until chicken is tender and white throughout; do not overcook or the chicken will be dry. Sprinkle cheese on top, cover and cook until the cheese melts (about 5 minutes)
I used more salsa and probably a little more cheese and served with Mexican Rice (Goya brand/the best).
Try it. You'll like it.
