Hi Nanas,

How is everyone doing tonight?

I got some bad news in an email from my church when I got home: our worship leader, Mary Barrett, a wonderful woman about 46 years old lost her battle with cancer. She was at church leading worship just a few weeks ago; then she left for Nashville to record some songs that she had written and had never been able to record. She got very ill in Nashville, and when she came home she went into hospice. It is just so hard to understand. Please remember her husband, Joe, and her mother in your prayers.

Lisa Rae-So sorry to hear about your friend:guilty: Our thoughts and prayers go out to her family:grouphug:

WHat happened to the furry guy you had been visiting?
Y'know Jeff, it's like dating. You have to feel the "click" and that wasn't happening.

Neva mind THAT! What happened to Duesy???????????
Duesey NEEDS a brother or sister ... someone - ANYONE - to play with and use up some of that energy!!! :rotfl2: Whereas we called our Sammy "110 lbs of Love", Duesey has earned the moniker "55 lbs of HAPPY" :goodvibes

Wow, lots of green lights on but not much typing.

OK I am really starting to panic. I know I will have everything ready but I leave in 2 weeks and feel like I have nothing done:scared:.

It's still been quite quiet here today. I decided to be in charge of dinner tonight (I actually do it a lot) and was tired of all the things I usually do and it was a tad nippy to go out on the deck and grill. So I searched for easy crock pot chicken recipes and found a ton of things that have six ingredients or less. I made one today and it was fantastic and probably the easiest thing I have ever cooked..so I thought I'd share the recipe.

1 can (15 oz) black beans, rinsed and drained
2 cans whole kernal corn, drained (i used frozen and just thawed under water)
1 cup bottled thick and chunky salsa - i used our grocery store's homemade salsa which is better than any jarred stuff.
5 or 6 skinless boneless chicken breast halves (about 2 lbs)
1 cup shredded Cheddar Cheese

In slow cooker, mix together the black beans, corn and 1/2 cup of the salsa. Top with the chicken, then pour remaining 1/2 cup of salsa over the chicken. Cover and cook on high for 2 1/2 to 3 hours or until chicken is tender and white throughout; do not overcook or the chicken will be dry. Sprinkle cheese on top, cover and cook until the cheese melts (about 5 minutes)

I used more salsa and probably a little more cheese and served with Mexican Rice (Goya brand/the best).

Try it. You'll like it.

I will be trying this next week. Thanks Jeff.

Here's another chicken recipe - this one from Family Fun magazine.

A good teriyaki sauce gives grilled chicken a rich auburn color. Our homemade version includes just the right amount of ginger to give it an equally appealing taste. While you can also use boneless breasts for this recipe, boneless thighs stay moister during grilling.
RECIPE INGREDIENTS:
MARINADE
1/4 cup ketchup
1/4 cup hoisin sauce
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 teaspoons minced fresh garlic
2 teaspoons minced fresh ginger
2 teaspoons dark sesame oil

TERIYAKI CHICKEN
8 boneless, skinless chicken thighs (about 4 ounces each)
Sesame seeds, toasted in a skillet
Cooked rice
Scallion tops, cut into 2-inch-long strips (optional)
1. Place the chicken thighs in a gallon-size zip-lock bag and add the marinade ingredients. Press the air out of the bag and seal it. Turn the bag to thoroughly coat the chicken, then place it in a bowl and refrigerate it for at least 4 hours (preferably overnight), turning the bag occasionally. Remove the meat from the refrigerator 20 minutes before grilling.

2. Prepare a charcoal fire or set a gas grill to medium-high, close the lid, and heat until hot -- about 10 to 15 minutes.

3. Remove the chicken from the bag and discard the marinade. Grill the thighs until they are no longer pink inside, about 5 minutes per side on a gas grill.

4. Transfer the thighs to a cutting board and let them rest for about 5 minutes, then slice each piece at a diagonal. Sprinkle on the toasted sesame seeds. Serve over rice, garnished, if you like, with scallion strips. Serves 6 to 8 (well, the Recipe says 6 - 8, I think its more like 4, if y'all eat like we do)

We haven't grilled them yet, the season being over. Last time I sauteed the chicken thights, and tomorrow, i'm trying baking them.

Linda-this sounds good too! Thanks for sharing.

Night Nanas. I am tired. Sweet DCL dreams. I had one last night and than my alarm went off.:headache: It was not a bad dream. I just don't remember much about it. I just know I was on the ship and I did not want to wake up.

Evening all,
I just helped Dawn finish out the 09 thread and start a new one.
In that thread we posted over 116,000 nanas:cool1:
