10/24/2009 Bash On the Boat (I'm with B.O.B.) - Thread #15

Toffee Squares

1 c (2 sticks butter)
1 c. packed brown sugar
1 egg yolk
1 tsp vanilla extract
1/4 tsp salt
2 c sifted flour
½ pound milk chocolate chips
½ to 3/4 c chopped pecans

Preheat oven to 350 degrees.

Cream butter. Add sugar gradually. Blend in eggyolk, vanilla, salt and flour.

Press into greased 15 x 10 x 1 inch pan. If batter is too sticky to spread, flour fingers lightly. Bake in preheated oven about 20 minutes.

While it is still hot, sprinkle milk chocolate chips over top and spread with knife or spatula. Sprinkle with chopped nuts and let cool. Cut into small squares then refrigerate. Makes about 6 dozen.

Notice....no alcohol related ingredients!!! :)

Got more good news this afternoon. By switching from our AmeriHealth HMO insurance carrier to the township health insurance provider we can keep Lina on our policy until age 23 and she will be fully covered, as long as she still lives with us and remains unmarried. This is a "BIG" load off my mind. The township has open enrollment in April so I will be getting the paperwork ready before then.

I was going to have to switch to this plan before I retired anyhow, so I figured we might as well make the switch this coming April.

Some of the coverages change, but all in all, it will work out better for us!!! :goodvibes

Here's another:


Amaretto Cherry Nut Bread

1 ½ c flour
2 tsp baking powder
½ tsp salt
½ c soft butter
1 c. sugar
3 eggs
½ c Amaretto
1 c. chopped nuts
1 c sour or bing cherries halved. (I used canned)

Sift dry ingredients. Cream sugar & butter. Add eggs. Fold in dry ingredients, Amaretto, nuts, and cherries. Pour into greased 9 x 5 loaf pan and bake at 350 for 1 hour.

Amaretto Glaze

6 tbl sugar
6 tbl Amaretto

Mix together and let stand until sugar dissolves. Poke holes in warm bread and pour glaze over the top.



Hmmmm, both recipes involved alcohol of some sort. :scared1:

I think after the new year, we will have to have a party and I will have to cook a huge gumbo for everyone....maybe for Mardi Gras.:banana:

In my college days, I was responsible to make "Gumbo" after New Year's Party to sober up the friends for a safe ride/walk home..Not one friend was lost due to Driving/Walking under the influence.:thumbsup2

This sounds yummy except here comes my food idiosyncrasy NO NUTS IN DESSERTS!!! Sorry, I couldn't find a smilie that was spitting out nuts! :lmao:
 
I feel that I'm a smart person so why can't I figure out that damn puzzle?!?!?!Help me please before I lose it.

Just discovered that we can't get the tree out of the attic without unstacking the washer and the dryer. So no tree yet. Got out the small table top one and that will have to do. Now to keep that cats from knocking it over.

Thanks to Lina's cat Stefani, we had to buy a 4 foot tree and place it on the entertainment center in the livingroom. Stefani was climbing up the middle of our old 6 foot tree and knocked it over a few times. Not only that, but she was also trying to eat the fake pine needles. We needed to get a new tree anyhow, so we decided to go with the 4 foot tree, now she can't get to it.........:rotfl2: :rotfl2: :rotfl2:

I didn't know that either! We have xmas crackers every year. In fact, I have an extra box from the year before last still sitting in my pantry :rolleyes1

They are in every store at Christmastime, funny that you guys don't have them...learn something new every day I guess. ;)

Some of my fave xmas pics are with the paper crowns (that come in some of the crackers) on our heads:lmao:
We have Christmas Crackers down here in Georgia!
