Jim and I were married in Hawaii in 2006. We honeymooned on a 7 night Hawaiaan Cruise through NCL (Freestyle). We had an awesome time, however, I did not really like the freestyle cruising. We were on the Pride of Aloha!! Very cool and had a blast. Visited 4 islands.

We have a custard stand that makes a pumpkin custard that puts Culver's to shame. AND they have a spectacular caramel sauce which when combined with some pecans makes for a superb sundae! :drool: Too bad I have to wait until next month! :(

OK, where is this at??? Because I would be willing to drive there and try this pumpkin custard!!!:cool2:
 

Canadian Cheddar Cheese Soup


1/2 lb. bacon, cut into 1/2 inch pieces
1 medium red onion, cut into 1/4 inch pieces
3 celery ribs, cut into 1/4 inch pieces
4 tablespoons butter
1 cup all-purpose flour
2 cups chicken stock
4 cups milk
3/4 pound grated white cheddar cheese
1 tablespoon Tabasco Sauce
1 tablespoon Worcestershire Sauce
Salt, and freshly ground pepper, to taste
1/2 cup warm beer
chopped scallions or chives, for garnish

1. In a 4- or 5-quart Dutch oven, cook the bacon, stirring over medium heat about 5 minutes, or until lightly browned.

2. Add the red onion, celery, and butter, and saute until the onion has softened, about 5 minutes.

3. Add the flour and cook, stirring constantly, for about 4 minutes over medium heat. Whisk in the chicken stock and bring to a boil for 1 minute. Reduce heat to a simmer and cook for 15 minutes, stirring occasionally.

4. Add the milk and continue to simmer for 15 minutes. Do not boil after you add the milk.

5. Remove from the heat and stir in the cheese, Tabasco, Worcestershire, slat and pepper until the cheese is melted and the soup is smooth. Stir in warm beer. If the soup is too thick, add some warm milk.

6. Serve the soup hot, garnished with chopped scallions or chives.

Personal note: Use a really nicely aged cheddar and a good beer. :)

Wow, I am doing this from my laptop rather than my I touch. It is wierd seeing all the little icons I can pick. I just wanted to say its neat to see so may Midwestern people planning to take this cruise. My husband and I live in Warrenville, IL. Prior to moving to Illinois, we both grew up in Northwest IN. We will be turning 50 this year so we are using this cruise as our big celebration! :rockband:
 
Pumpkin Cookies

1 cup sugar
1 cup canned pumpkin
1/2 cup shortening
1 tablespoon grated orange peel
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup raisins
1/2 cup chopped nuts (I use walnuts)

Heat oven to 375 degrees. Mix sugar, pumpkin, shortening and orange peel. Stir in flour, baking powder, baking soda, cinnamon and salt. Stir in raisins and nuts.

Drop dough by teaspoonfuls onto an ungreased cookie sheet. Bake until light brown, 8 to 10 minutes. Immediately remove from cookie sheet, cool.

You can also ice them if you want to with Light Brown Glaze:

1/4 cup margarine or butter
2 cups powdered sugar
1 teaspoon vanilla
1 to 2 tablespoons milk

Heat margarine in 1 1/2 quart saucepan over medium heat until delicate brown. Stir in powdered sugar and vanilla. Stir in milk until smooth.

It is Ollie's Frozen Custard located at 2290 Oakland Drive, Sycamore, IL. It will take you about an hour and 15 minutes, and well worth it IMO! Here is a link to their website: Ollies' Website The next (and last) time they will have the pumpkin is Friday the 29th. They close for the season on November 1st.

bummer... do they have any frozen quarts you can buy. I have a friend from DeKalb coming up tomorrow nite for a candle party we're going to. I'd ask her to stop and get some if they would have any frozen.
