Yuck too many hard boiled eggs!!!!!!!!

So what do all of you do with the 10 dozen eggs we just boiled for the kids. Ususally do the deviled eggs and eggsalad what else is ther????????????
 
Get some avacado, bacon, lettuce, tomato and blue cheese and have a yummy cobb salad!
 
I like to add a few boiled eggs to my potato salad.

I wonder if you can freeze a boiled egg?
 
Curried eggs on toast. Make a basic white sauce, add lots of chopped eggs and some curry powder to taste. Serve over toasted bread or english muffins.
 

I just checked my book "Will it Freeze?", it says not to freeze hard boiled eggs as the whites will develop a leathery texture. But if you have a lot of left over eggs that you will just throw away, I guess it can't hurt to try and see how they come out.
 
We do the egg salad routine, but my favorite is to make Pickled Eggs - or Red Beet Eggs. Yummy!! :teeth: :teeth: :teeth:
 
10 dozen??? Why? ROFL!! We're only doing a dozen and will probably be throwing most out.
 
todisney My sister and her 3 come to town and my kids they each get a dozen to color and usually a couple neighbors show up JUST IN TIME. I really hate eggs shortly after Easter and won't boil another until I need it for a salad come summer time. Iand the stores did not run any egg specials. usually pay about 39 cents this year 1.00 a dozen Whats up with that????????????
 
At first I also wondered why you had so many eggs, then I saw how many kids you had :)

We also do 1 dozen per child - I love dyeing eggs! However, we never eat ours. By the time they've been played with and hidden outside, they just seem...dirty. (of course, this is my own personal feeling, and I know there's nothing wrong with eating them if you observe the food safety rules and such :) We keeps ours out much longer than 2 hours) I used to feel bad for throwing them out, but as you said, they are cheap, and I've spent more $$ on toys the kids have played with less, so I feel I'm getting my money's worth :) Plus my DH has a ball tossing them into the woods behind our house when the time comes. (He also loves to hurl the pumpkins back there after Halloween - lol - and in case anyone's wondering, we own that property, so we're not tossing them in someone else's yard! I don't think I'd want to throw 10 dozen back there, though :eek: ) Also, we have several that will get lost or broken during hunts. We only have 14 left as I type....

I do love deviled eggs, though. Maybe I'll have to boil up some more eggs and make some of those :)

make yummy breakfast, lunch, or light dinner sandwiches with them! toast an english muffin, or leftover easter bread. cut up a hard-boiled egg into slices and layer it on top of the bread. then take a piece of cheese and lay it on top of that. put the whole thing under the toaster oven / broiler until the cheese melts. top with the remaining piece of bread. yummy! it's so much better than mcdonald's.
 
Twigs - thanks for the info on freezing the eggs. My dh wanted me to freeze some of ours, but I think I'll pass.

Everytime I open my refrigerator, I am hit in the face with the smell of all those eggs. My dh is the only one who will eat them after the first day. I love them when they are fresh boiled and still warm, but think I would gag if I tried to eat one cold.

Similar to another poster, I have let my girls play toss with a few of them outside, but that got old real quick when they had to pick up the mess they were making.:p
 
Paula Deen had a hard-boiled egg casserole on one of her shows (Food Network). It looked decadent and yummy! Here it is!

Egg Casserole

Recipe Summary
Prep Time: 30 minutes Cook Time: 40 minutes
Yield: 4 servings
8 hard boiled eggs
1/4 cup margarine
1/4 cup all-purpose flour
2 cups half-and-half
1 teaspoon House seasoning, recipe follows
1/4 teaspoon dry mustard
1 cup freshly grated Gruyere
1/2 cup freshly grated Parmesan

Preheat oven to 350 degrees F.
Gently remove the shell from the hard-boiled eggs and cut in 1/2. Place cut side down in a baking dish greased with margarine.

In a saucepan, melt the margarine, add the flour, and cook, stirring for 2 to 3 minutes. Add the half-and-half gradually, and stir until mixture thickens and season with house seasoning. Add the dry mustard and the Gruyere and stir until melted. Pour the sauce over the eggs and sprinkle top with Parmesan. Bake for approximately 20 to 30 minutes until bubbling and top is golden brown.


House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.
