Your Thanksgiving menu for 2?

DH and I are, most likely, staying home for Thanksgiving this year, due to just getting back yesterday from traveling half-way across the country by car for his grandfather's funeral. DH's mom is not in any condition to do Thanksgiving, and my parents are 5 hours away. I'm pregnant, and don't know if I'm up for that much time in a car again so quickly. It will likely be just the 2 of us. What would you make, for a fairly traditional meal?

A couple years ago, my family was in town right before Thanksgiving, so I found a 3lb boneless turkey breast and we made that. I was thinking that, mashed potatoes, stuffing, green bean casserole, gravy, rolls (not that I really eat rolls), and pie? Am I missing something that's a must-have? Should I do a whole turkey?
 
I would start a new tradition and have chinese or make a pan of lasangna, salad and breadsticks.

Sounds good to me.. The only thing I would add is cranberry sauce..:thumbsup2 No need for a full turkey - just for the two of you - unless of course one of you really wants it.. Enjoy! :goodvibes
 
It will definitely be primarily traditional-I'm already craving it!! I forgot cranberry sauce-I actually bought some tonight. We grabbed the stuffing mix we like and I already had the stuff for green bean casserole.

I'm not going to make the potatoes...I like the premade ones from the grocery store for the amount of effort for 2 people.
 

Is there a restaurant that is open that does take for a holiday meal. That was me and mom is doing. We each get own Thanksgiving plate to have at home. Yes we are going to one my cousins house to eat. Mom was not raise by here so aunt taught us always have something to eat at the house because some people are funny about there food. i found that be true.

We doing a big meal for Christmas.

P.S. Wal-mart has turkey for 5.00 under. I would go that right. Yes it true I bought one cook for late in the month.
 
A small dinner sounds nice.

I second the cranberry sauce. I like the whole cranberries. I think the only other thing I would add is sweet potatoes because I like them and only have them on Christmas and Thanksgiving (for some odd reason).

I'd just check with your husband and see what his favorite part is. Have your favorite, his favorite, and fill it out however you want.

When we have a small Thanksgiving, we skip the stuffing and the sweet potatoes. I would only do a whole turkey (the smallest one you can find) if you enjoy leftover turkey and making turkey soup etc. out of the carcass.

I like you low key Thanksgiving dinner. Unless ya'll just really LOVE turkey, I think a turkey roll or turkey breast should be plenty. Some of those already-mashed-store-potatoes,can of cranberry sauce, some green beans, Stovetop stuffing, gravy from a jar, and some kind of dessert. Easy peasy. You won't even break a sweat. Plus, you'll have some leftovers, but not too many.:goodvibes
 
Also, I know someone who picked up her Thanksgiving dinner at the deli in the local grocery store. She said it was very good. Everything was fully cooked and just needed to be heated.
 
I'd get a couple of cornish game hens instead of turkey. Then have all the traditional side dishes. (Such a foreign concept for me - I usually have 20-25 for dinner!)
 
Dh has to work on the holiday so we would most likely cook Thanksgiving dinner next weekend and freeze it for the actual holiday. We are most likely keeping things simple and close to WW friendly. I'm thinking sweet potatoes (in microwave or roast it with root vegetables), turkey breast, cranberry sauce or relish, and maybe green beans with some silvered almonds. I hope to go to Trader Joe's next week to see if they have any small sides to change things up. I might forgo the traditional items and make turkey tacos and salad. Dessert--have no clue.

I usually have biscuits and cornbread dressing w/sausage...but, not while we are trying to be good on WW.
 
We're going to be here for Turkey day as well, so I was thinking about just getting a hunk of turkey breast at the grocery store, then baking that. Mashed potatoes (real potatoes, I don't like the boxed kind), corn, gravy, and homemade stuffing. I actually make my stuffing from scratch :). We're not big dessert eaters, but I might make some apple turnovers or something along those lines.

I'd kind of like a small Thanksgiving myself.... but we are going to my Aunts and there will be about 40 people.

Well, I have always just done Thanksgiving for two! Just me and my daughter! We found this little turkey loaf (Jennie-O, breast meat w/gravy) and it is perfect for us (and only leftovers for one meal.....not a months worth!). DD20 prefers boiled potatoes, I love sweet potatoes. I make some fantastic stuffing (that's the "hardest" part of our meal), we decide on a green vegetable and have our rolls.

This year we are having Thanksgiving at her apartment (I only have to bring my stuffing with me)!
 
For the last two years, we have picked up most of our Thanksgiving dinner from Cracker Barrel. The kids don't eat much of the food we were cooking and it was silly and very tiring for DH and I to spend the time and money cooking a big meal. There are still a couple of dishes that we make, just because they are family favorites (homemade chocolate pie, YUM), but nothing like we were doing before. We now relax and enjoy our Thanksgiving instead of spending it in the kitchen.

Eh, I would not do a turkey. You can roast a chicken instead. Of course I like dark meat and I need the homemade gravy.

even thou I am one right now, and do not eat meat...I marinade and cook a whole fresh stuffed turkey! I Sometimes on thanksgiving I will eat a piece of turkey!

But I tried one year to do a turkey breast, to me it just is not the same!! not the smell or anything.
so I would do a small 10 pound bird, just think of the left overs you will have and not have to cook for a few! maybe even make some soup!
 
the year we had the twins it was essentially just the two of us for thanksgiving dinner. well, we had a 2 year old and infant twins, but none of them ate the dinner! lol. I ended up making a full turkey with all the trimmings because dh really wanted a whole turkey and not just a breast. was fine, didn't take any more time, really. we probably cut down on the number of veggies, but I did make both stuffing and mashed potatoes.

it ended up being a really nice day. we usually host family, so this was a really quiet, low key day. the next day spur of the moment we drove out to cooperstown (we lived in saratoga springs at the time) to the baseball hall of fame.

-make reservations at a local restaurant and you can both have what you want! I LOVE being waited on for the holidays and having dinner out! Catch a movie after it if you can- I know you need to buy tickets way in advance here for Thanksgiving night and Christmas night movies as they are two very popular nights to go out to the movies.
