I just got off the phone. I have to say the Lady that helped me was great!!
Take at look at what I picked and give me your thoughts. It is for 2 adults and a 4 year old boy. She put a note in there about his Birthday as well!

Arrival night: Dinner at 1900 Park Fare

Next day Dinner at the Crystal Palace

Third Day at the Hollywood & Vine for a late breakfast

Fourth day no ADR

Fifth day early Lunch at the Garden Grill

Departure day Breakfast at Ohana

Do you think I did okay?
 
Looks good. Of the ones you have we have ate at CP, H&V, GG and Ohana's. We enjoyed all of them. Great charector interaction at GG and O'hana. Our charector experience at CP wasn't that great but it wasn't terrible either. The Polynesion is also a great resort to tour, arrive or leave a little extra time for your Ohana's ADR to explore.

There isn't alot of 'variety' in the types of meals you have planned, you will still enjoy them but all are basic 'american' cuisine (even Poly at breakfast, just a few different things). I don't know if your group is adventurous but we really enjoyed trying different cuisine and loved Boma! (@ AKLodge) and Akerhus (@ Norway).
 
They sound like great choices but I think I would pick an "adult" meal or two. Our daughter was fine at four sitting with the coloring pages, especially after a day of so much stimulation.
