hit a good sale and am looking for something new to do with it. Tired of the old meatloaf/tacos/ soup casserole deal.

This is one my mom use to make weekly

ground beef, mashed potatoes and creamed corn casserole

brown ground beef 2lbs will feed 4-6 add spices to your liking, drain grease, place in casserole dish, add mashed potatoes on top of that and add a can of cream corn on that. Place in oven till warm.
 
I made this the other night:

Meat Bobotie Recipe from Boma, Animal Kingdom Lodge

Ingredients

2 pounds Ground Lamb, Beef or a mixture of both
½ pounds Onion, large dice
1/8 cup Rice Wine Vinegar
1/16 loaf White Bread
1/16 gallon Cream
1/16 pound Sugar (add more as needed)
¼ ounce Cinnamon (adjust as needed)
1/8 pound Almond or Pumpkin Seeds, sliced
1/16 pound Seedless Raisins
1/16 pound Golden Raisins
1/8 ounce Curry Powder (adjust as needed)

Topping
1/16 gallon Easy Eggs
1/16 gallon Heavy Cream/Milk

Yield: 10 servings
Method

Heat oil and caramelize the onions. Reduce heat and add dry spices. Mix well. Deglaze with rice wine vinegar. Add meat and continue to cook until meat is cooked through.

When the meat is done, drain 90% of the grease off. Then tear the bread into small pieces and add it as well as the cream to the meat mixture.

Add the sugar and mix well. Add a little bit of water if the mix looks too dry. Then add the raisins and almonds. Re-season and cool.

In a small container, place the bobotie mixture and top with the egg custard mix. Bake in the oven at 325o until golden brown and cooked through.

For various and sundry reasons, I did not make the topping. I also had to leave off the seeds, and used milk instead of cream, but it still turned out well. The kids ate it (and the fufu as well, which was a surprise). I'll be making it again at some point in the near future - I did not get as much as I would have liked.
 
Take 1 LB ground beef, brown in frying pan and drain off grease.

Add:

1 C ketchup
1/2 C water
2 T brown sugar
2 T mustard
2 T vinegar

Voila, delicious spaghetti sauce. Serve over whatever pasta you like.
 

What about a shepherds pie? No recipe, but should be simple to find one online.
 
Well, I don't make it and I really don't know how, but when I was little my dad used to make us "S.O.S" which he originally served in the army. Don't know if it just reminds me of my childhood or if it's really THAT good. But I love it.
 
Dh nixed the Shepherds pie :rolleyes: but thats what sounded good to me too!


SOS with ground beef? I always had it with corned beef. now Im going to have to look it up. Thanks :)

Okay, I can't cook.

But, with ground beef I do this:



Brown and drain the ground beef. Add two cans of tomato sauce (just the plain stuff). Then, I add seasonings to it and veggies if we have them and boil a pot of pasta and combine and voila! It tastes like really good homemade food.
 
Tater Tot Casserole! (EASY and YUMMY!)

I use 1.5 - 2 pounds burger, seasoned to your liking
1 BIG can Cream of Mushroom Soup (I sometimes use a small can too!)
Mushrooms
1 package dry onion soup mix
1 bag tater tots

Brown your burger with the mushrooms and drain. In a casserole dish, mix the dry soup mix and cream of mushroom soup. Mix in the browned burger and about 3/4 of the tots. Once that is all mixed toss the remaining tots on top.

I put in the oven at about 425 for around 20 - 30 minutes!


Another hit at our house:

We call it "Crap on Potato's" .....don't know what it "technically" may be called!!

1.5 - 2 pounds of burger, browned and seasoned to your liking
2 - 3 cans of ABC Vegatable soup

Brown the burger and drain ~ add the soup and heat. Serve over mashed potato!!


Another:

Hamburger Steak with Gravy

Make hamburger patties, season to your liking. Do a quick browning on both sides. (I also add mushrooms) Lower heat, and add Cream of Mushroom soup (I generally do 2 BIG cans!) and let simmer to finish cooking your burgers and heat your gravy.

Serve with mashed potato or rice!
 
Hamburger steaks with minced onions and green peppers in the patty. Serve with new potatoes or mashed potatoes.

My husband fixes a "beef scramble". He throws in a pound of ground beef, salt & pepper, onion, whatever spices he can find. Opens a can of Del Monte Diced New Potatoes. Tosses it all together in a bowl.
 
Beef and Bean Nachos

Brown the Hamburger - Stir in refried beans - season it all with Taco Season.
Spoon on top of Nacho Chips. Top with plenty of cheese.
Bake at 350 for about 10 minutes until everything is warm and melty

My MIL invented this dish when DS was a kid. I don't know if it has a name or comes from a specific culture but it is yummy anyway. We just call it Marsala and beef.

Brown a bunch of ground beef in a frying pan
Add a bunch of thinly sliced celery to the beef & grease
when it's cooked strain out the grease
Add a good amount of Marsala to taste. I love Marsala so mine is heavy but if you don't love it use less.
I have added to her recipe a sprinkling of Emeril's home made Essence.
cook off the alcohol for about 3-5 minutes
make a side of rice and mix it all up together and serve.

It sort of tastes like the inside of a stuffed cabbage. Oh, and Tyler Florence's Stuffed Cabbage recipe is another goodie for ground beef:thumbsup2

Beef Stuffed Peppers (I love to do these poblano peppers for a mexican twist)

Beef, Spinach, and Cheese stuffed Shells or manicotti

Oh - I made this before - it was really good...


Gnocchi with Beef and Bacon

1 tablespoon extra-virgin olive oil
4 ounces bacon, diced
4 cloves garlic, smashed
1/2 pound coarsely ground beef
2 tablespoons red wine
3 shallots, chopped
1 cup diced carrots
1 stalk celery, sliced
2 tablespoon tomato paste
Kosher salt and freshly ground pepper
1 15-ounce can tomato sauce
1 cup low-sodium beef broth
1 bay leaf
1 package (about 1 pound) vacuum-packed gnocchi
2 Tablespoons Italian seasoning
1 Tablespoon Red Pepper Flakes

Heat the oil in a medium skillet over medium-high heat. Add the bacon and garlic; cook until the bacon starts to brown, about 4 minutes. Add the ground beef; cook, stirring, 3 minutes. Add the wine, shallots, carrots, celery and tomato paste; cook until the vegetables soften, about 4 minutes. Season with salt and pepper, Italian seasoning, and red pepper flakes.
Add tomatoes to the pan. Stir in the broth, bay leaf, orange peel and olives. Bring to a simmer and lower the heat; cover and cook 20 minutes. Uncover, increase the heat and bring to a boil to thicken the sauce.
Bring a large pot of salted water to a boil the gnocchi until one floats to the top, about 1 minute. Drain immediately to prevent the gnocchi from becoming mushy. Remove the bay leaf from the sauce and season with salt and pepper. Toss the gnocchi with the sauce. Serves 4.
 
Skillet Lasagna

Brown your meat with a little italian seasoning, Garlic powder & onion powder - drain.

Add meat back to a large skillet (I use a T-Fal Chicken Fryer)
Pour 1 box of Farfalle (bowtie) pasta over the meat
Pour 1 LARGE can of tomato sauce over the pasta
Add enough water so that it just begins to cover the pasta (add the water down the side of the pan so that the tomato sauce still covers the pasta)
sprinkle the tomato sauce with a little more Italian seasoning and garlic & onion powder.

Cover and let simmer on medium heat for 10 - 15 minutes (until pasta is done -- I sometimes have to add a little more water around the 10 minute mark)

Mix 4 oz of cottage cheese & 4 oz of ricotta cheese and dollop on top of pasta, sprinkle with mozzarella and parmesan cheese (as much as you like) cover and let the cheese melt for 2 -3 minutes.

Stir and serve -- my kids love this!

Speaking of her - I love her Meat Sauce Recipe and all the ideas you can do with it... I like it over pasta...

Pizza Bake

2 tubes refrigerated crescent roll dough
1 lb. ground beef
1 15-oz jar pizza sauce (or spaghetti sauce)
2 cups mozzarella cheese, shredded

Unroll one tube of crescent rolls; place in a lightly greased 9x13 baking dish. Press to seal perforations. Set aside. Brown ground beef; drain. Sprinkle bee over dough, top with pizza sauce and cheese. Unroll remaining tube of crescent rolls and place over cheese layer and press to seal perforations. Bake at 350 for 30 min.

** you can also add pepperoni, and/or sauted veggies (peppers, onions, mushrooms) on top of the meat layer.
 
We like ground beef browned with either worchester sauce or good old salt and pepper or Lawrys seasoning salt. Nothing else, just seasoned meat

Serve with plain white rice & a veggie

Thats what we wound up doing. Black and bleu burgers, no sitting outside though I think our wind gusts are up to about 35-40 MPH. :eek: We might blow away! ( well ok not me, but my kids maybe :rotfl2::rotfl2: )
