your favorite fudge recipes?

The absolute easiest, no-cook (except microwave) fudge is this:

2 boxes Baker's semi-sweet chocolate squares
1 can (14oz) sweetened condensed milk
2 tsp vanilla
1/2 C walnuts (if desired)

Line an 8X8 pan with aluminum foil. Melt together the chocolate and milk in a microwave-safe bowl for two minutes. Stir. If lumps remain, microwave another 30 seconds. Add in the vanilla and beat like heck for a minute. Add in the walnuts if you want to use them. Pour the mixture into the prepared pan and stick in the fridge for a couple of hours.
 
We were just talking about this in the Budget Board! My fav is the one on the marshmallow fluff jar. But be creative! Use milk, dark, mint, or semi sweet chocolate. Try white chocolate with finely chopped red and green cherries for Christmas. Make sure you drain and pat them dry or it will change the color of your fudge. OH! And peanut butter chips are devine!
 
I drive to the candy store at the shore and buy a little of each :-)

I love chocolate, peanut butter, chocolate marshmallow, vanilla....
 
My mother would disagree b/c she is an old school candy maker, but I LOVE this quick/easy recipe:
Kelly's Mother's Fudge



3 cups granulated sugar
¾ cup Parkay margarine
2/3 cup Evaporated milk (small can)
1 – 12 oz Semisweet Chocolate chips – tollhouse
1 jar Marsh mellow cream
1 cup nuts – walnuts
1 teaspoon vanilla

Combine sugar, margarine and milk in heavy sauce pan – bring to full boil – stir constantly for 5 minutes

Remove from heat

Add Chocolate – stir until melted

Add Marsh mellow cream – stir

Add Vanilla and nuts – stir

Pour into 13 x 9 GREASED pan – allow to cool then cut into pieces!

We make girl fudge and boy fudge and I am definitely going to try some peanut butter chips this year. Yummy! (I only make candy at Christmas.)
 
Love Peanut Butter Chocolate Fudge. It's like a melt-a-way.

1 jar Sam's club peanut butter (17 oz)
1 bag white chocolate melting wafers
1 bag dark chocolate melting wafers

Butter a 9 x 13 inch cake pan. Place peanut butter and both bags of chocolate wafers in a microwavable bowl. Microwave for 3 minutes. Stir until smooth. Pour into greased cake pan. Cool.

Yummmm, delicious. Everyone asks for the recipe. They can't believe how easy it is.

I wish I had my grandmother's fudge.

It was so perfect, not too sweet, not too chocolately. It just melted when you ate it.

I know that the pan was lined in butter, and once in a while, you would get the nicest little ball of powered sugar.

She probably used the one that required a box or powdered sugar, vanilla, cocoa and butter.
