Let the baking begin!!!!

Mine is one I kind of made up one night when I wanted something sweet but we had no cookies or ice cream in the house.

I took a ready made pie crust and placed it on a greased cookie sheet. I then took some marscapone cheese and mixed in a touch of honey and spread that onto the crust. I then sliced some apples very thin and placed them on top of the marscapone cheese. I sprinkled a bit of cinnamon on top before baking ti at 350 degrees for 20 minutes. It was yummy. Sweet yet savory.
 
This one is so easy--I make it all the time in the fall and it's great to throw in the oven when you have unexpected company. I leave out the lemon and add cinnamon, as well. It's more of a tart than a pie and I serve it with vanilla ice cream or whipped cream.

Rustic Apple Pie
1 refrigerated pie crust (from a 15-oz box of 2)
3 Tbsp sugar
1 tsp freshly grated lemon peel
1/4 tsp ground nutmeg
3 Golden Delicious apples (about 1 1/4 lb)
1 Tbsp butter, cut into pieces
Recipe Preparation
1. Heat oven to 450ºF. You’ll need an ungreased baking sheet.
2. Unroll pie crust onto baking sheet.
3. Mix sugar, lemon peel and nutmeg in small cup. Sprinkle 1 Tbsp over crust. Peel and core apples; cut into 1/2-in.-thick slices.
4. Leaving a 1 1/2-in. border, arrange apples on crust as shown. Sprinkle with remaining sugar mixture, then dot with butter. Fold edges of pastry over apples, casually crimping dough to fit.
5. Bake 15 minutes. Reduce oven to 375ºF and bake 25 minutes or until apples are tender and pastry is golden. Remove to wire rack to cool. Serve warm or at room temperature.
 

cooking light as an upside down apple cake in it's current issue. it looks really good. i'm thinking about trying it out.
 
I would love a great and easy apple crisp recipe if anyone has one.

oh and I have had the Cooking Light apple cake. I agree that it's really good!

Take a folding ready made pie crust and place it in a small pie pan. Open a can of unsweetened apple pie filling and put in a bowl. Add a cup of sugar, 2 pats of butter and cinnamon. Dump it in the middle of the pie crust and fold over from all corners like a tart. Bake in a 375 oven till golden brown.

this is my grandmas recipe for apple crisp and it sounds hard but it is really easy to make. The ingredients are simple and it makes for a fun and very yummy apple crisp.

oven to 350
for a 9x 13 pan about 45 min or till nice and brown and bubbly

for crumble that goes on bottom and on top of apples <note you might not need all of this, it is really up to you on how much crumble you want to use, this is a doubled recipe as everyone who we know that uses it doubles it>

1 cup butter or margerine
2 cups brown sugar
4 cups of flour
1 1/2 cup oatmeal


as many apples as you want to pile on, sliced of course, We like them piled on thick


sauce <doubled as well> in a saucepan :

2 cup of sugar
2 cups of water <can substitute 1 cup of apple juice for 1 cup of water but would go lighter on the sugar>
2 tsp vanilla
4 tablespoons corn starch
2 tblsp butter




directions.....


mix the crumble until small little pieces <with hands is the best>, take half of mixture and press into bottom of pan. place apples on top of mixture.

put ingredients into sauce pan on heat and mix until boiling and thick then take off.

poor sauce over every bit of apples. Take the rest of the mixture and crumble over top. put it oven. Grandma says wait till cooled but I like it nice and hot.
 
My Mom requested an Apple Cobbler or Apple Pie for her birthday this weekend. I'm making an Apple Crisp Pie with homemade vanilla ice cream and ginger-cinnamon whipped cream :goodvibes (I scoured the Internet for days looking for a great recipe!)

Apple Crisp Pie

This apple pie is made with fresh apples and a crunchy oat and pecan streusel topping. An apple crisp in a pie shell.
Ingredients:

* 5 to 6 cups thinly sliced apples, a combination of varieties
* juice of 1 lemon
* 1/2 cup granulated sugar
* 1/4 cup brown sugar, packed
* 1/4 cup melted butter
* 3 tablespoons flour
* 2 teaspoons ground cinnamon
* 1/8 teaspoon nutmeg
* 1 deep-dish pie shell, unbaked, 9-inch
* .
* Topping:
* 1/2 cup all purpose flour
* 1/2 cup granulated sugar
* 6 tablespoons butter, cut into small pieces
* 1/4 cup rolled oats
* 1/4 cup chopped pecans

Preparation:
Toss sliced apples with lemon juice to coat well. Add 1/2 cup sugar and the brown sugar, 1/4 cup melted butter, flour, and spices, stir until mixture is well blended. Prepare pie shell.

In a food processor, combine topping ingredients; pulse until mixture is crumbly. You can also use a pastry blender or forks to cut this mixture together.

Pour apple mixture into the prepared pie shell. Sprinkle topping mix evenly over top of apples.

Place in preheated 375° oven. Bake for about 45 to 60 minutes, until apples are tender and topping is browned. Check after about 30 to 35 minutes to make sure the crust isn't getting too brown. Use a pie shield or ring of foil to protect the crust edge if necessary.

I'll take a pic on Saturday and post it here and let you know how it tastes! It looks delicious!

Here is the recipe - with some of my personal thoughts along the way..


Glazed German Apple Cake

5 apples - peeled and thinly sliced (I use twice as much - we like apples!)
5 Tablespoons sugar
2 teaspoons ground cinnamon (I use more - we love cinnamon too!)
3 cups of flour
2 and 1/2 cups of sugar
1/2 teaspoon salt
4 eggs
1 cup vegetable oil
2 teaspoons vanilla extract (I use a bit more of that too..)
1/3 cup of orange juice
1 and 1/2 teaspoon baking soda
1 and 1/2 teaspoon baking powder

Preheat oven to 350 degrees. Grease and flour large fluted (or not) bundt pan.

In a medium bowl, toss the apple slices, 5 Tablespoons of sugar, and the 2 teaspoons of cinnamon. Set aside.

In a large bowl, mix flour, sugar, salt, eggs, oil, vanilla, orange juice, baking soda, and baking powder. With an electric mixer on low, blend for 1 minute. Then set mixer to medium, and blend for 3 minutes. The batter will be very thick.

Fill the bundt pan in layers - beginning and ending with the batter. Batter, apples, batter, apples, batter, apples, batter - until you run out of ingredients.

Bake for 1 and 1/2 hours to 1 and 3/4 hours - or a toothpick inserted in cake comes out clean.

Cool in pan - on a wire rack - for 10 minutes. Then invert onto a serving dish/platter.

When completely cool, drizzle with Glaze..

Glaze

1 and 1/2 cups of Confectioners (powdered) sugar
2 Tablespoons butter or margarine - softened
1 and 1/2 teaspoons vanilla extract (I use a bit more.)
1 to 2 Tablespoons of water (whichever is required to acheive the correct "drizzling" consistency)

Combine all in a medium bowl and mix until smooth and of the correct consistency.

If I don't feel like fussing with the Glaze, I serve it with a bit of Confectioners sugar sifted over the top. My family actually prefers it this way..

***Because this cake is so dense, moist, and there are so many apples in it, I find it best to cover and refrigerate leftovers to prevent mold from the apples (especially in the warmer weather)..

Not so much a recipe as a way to assemble

Pork chops with baked apples

*Heat a skillet and add oil to cover bottom of pan (I use olive oil)

*Preheat oven to 350-375 (you may want to change temp depending on if you have a side dish to go in oven)

*season pork chops with salt and pepper

*Sear seasoned pork chops in oil both sides

*Meanwhile peel and slice apples (about 1 for every 2 chops, or more if you like)

*Place apple slices in baking dish

*sprinkle with a little brown sugar (about 1 TBL for 2 apples)and cinnamon (about 1/2 tea per 2 apples)

*Place seared chops on top of apples

*cover baking dish with foil

*bake in 350-375 oven for about 20-35 min (or a little longer if real thick chops)

Good moist chops YUM!
 
My favorite, and super-simple!

Baked Apples

Pre-heat the over to about 350, approximately.

1. Core an apple for each person.

2. Line a baking dish with tinfoil, and arrange the cored apples standing upright inside.

3. Spoon a spoonful of raisins inside each apple.

4. Drizzle apple juice over them.

5. Stick them in the oven to bake until they're soft. How long that takes will depend on how big and crisp the apples are. Just stick a fork in them every so often to check. It's no big deal if they overbake - they'll just be softer.

Finally, scoop them out and stick them in bowl, drizzle any remaining juice over them, and serve.

They're nice with ice cream and/or whipping cream, too!

P.S. Without the ice cream, it's actually pretty diet-friendly, too.

My grandmother did this growing up, and I love love love it now, though in all honesty it's not one I make often. It makes a LOT (8 - 12 servings, depending on how you cut it) and we're just 2.

Apple Stuffed French Toast Casserole

2 loafs (16 oz) Cinnamon Bread
8 oz cream cheese
3 to 4 large cooking apples, peeled and sliced thin
1 stick butter or margarine
2/3 cup brown sugar
1 Tablespoon water
1 dozen eggs
2 cups milk
2 teaspoons vanilla
1/3 cup maple syrup
Cinnamon (if desired)

Peel, core and slice your apples. These slices can be in wedges or rings.

Cube the first loaf of bread and place in the bottom of a greased 9"x13" pan. Dot with cubed cream cheese.

Combine the butter, brown sugar, water and apples in a pan. Cook until slightly softened, 3 to 5 minutes. Cover the cubed bread and cream cheese with this mixture, top with the second loaf of cubed bread.

Combine eggs, maple syrup, vanilla and milk, mix until completely combined. Pour over the bread and apple mixture, making sure every piece of bread is soaked. Sprinkle cinnamon over mixture if desired. Cover and place in the refrigerator overnight.

Take out of the refrigerator at least a 1/2 hour before baking. Bake 35 minutes at 350 degrees (covered). Uncover and bake an additional 30-40 minutes or until the casserole is set.
Serve with maple syrup or vanilla sauce.

I did something like this last week except I added onions and a handful of raisins and a little sprinkle of cayenne. Oh My! it was good!
