Your family's favorite cheap meal?

There are such recipes in the "Fix It and Forget it" trio of crockpot cookbooks. I own all 3 but have not tried any of the sweet and sour chicken recipes.

You might try a google search, too, since there are crockpot recipe sites.
 
Ok we did the chicken and dumplings today and it was a big hit. (in fact it is all gone.) DH doesn't like chicken in the crock pot, but this won him over.

I had to make some changes to make it dairy free. (and I can't leave good enough alone.)

So here is what I did.

2 frozen chicken breasts in crock pot
a container of creamy chicken soup (imagine food makes his and whole foods sells it.) It is orgainic and dairy free
table spoon of vegan margine
sprinkle of paprika and onion flakes. Some chicken seasoning (from frankinmouth Michigan)
cook on low, then high for a while

When I shreded it I didn't think it looked thick enough (dairy free cream of chicken soup) so I sifted some flour in to make it thicker.

One package of Meijer band biscuts (dairy free :banana: ) It was the only kind I could find that was dairy free. I cut them into quaters with kicten sisors. They all cooked on top of the mess, but I pushed them under to make them dumplings.

I was going to add frozen peas, but it was good the way it was.

It was yummy and a big hit.

DH says add it to the weekly list for dinner, but with this thread we will have too many others to try.

I am trying the cabab and sausage next! (oh and I forgot about the orange pop one.)

It's been my experience that the bisquits soak up alot of the liquid. Oh well, glad it worked out for you. Told you it was good! :earboy2:

I've seen a crockpot recipe where you mix chicken breast, veggies (carrots, peas, onions, whatever), and potatoes with an envelope of dry onion soup mix and a can of cranberry sauce. Does that ring a bell? I know we enjoyed it when I made it in my pre-veggie days.

The beans say they need to be soaked, but that takes too long so I just rinse them off and cover with water and boil them checking and adding water as they cook and soften. Once they start to soften I add everything else and let it cook.


Thanks for the tip, now I'll finally use up that bag of black beans in my cupboard!
 
I tried the taco soup and my family LOVED it!! My Dh told me to make it again, and we just finished it a few days ago. That is a big deal as he doesn't like leftovers. Oh, and my kids (DD8, DD6 and DD3) wanted it as their after-school snack!!!!! That will be added to my dinners, so thank you to who posted it. I tried the shredded chicken one with the peppers and onions and that was good too. We used it in tortillas and everyone just added their own toppings. I'm trying the chicken and dumplings tonight. It's almost done. Does this end up being like kind of a stew? I didn't shred it but cut the chicken up into small chunks. Should I go back upstairs and shred it? We'll see. I LOVE this thread!!!!

Okay and now for my contribution and I hope I don't burn in he** for sharing this recipe as it was given to me by my mother-in-law. This recipe is SO easy and SO fancy. You must have a bundt pan though.

KAHLUA CAKE

1 pkg yellow cake mix
1 small package (pkg) instant chocolate pudding
1 c. oil
3/4 c. orange juice
3/4 c. kahlua
4 eggs

Beat ingredients for four minutes. Pour in a greased and floured (or use Pam) bundt pan and cook for 45-50 minutes at 350 degrees. If desired, mix some kahlua and confectioner's sugar to make a glaze to pour on after the cake has cooled completely.

I'm not sure if the alcohol cooks out so please don't serve this to people who don't drink! Does anyone know if it would cook out?

The results is an incredibly moist and rich cake that people will RAVE about.
