Yikes - Need super-fast dessert ideas!

I had intended to make a pumpkin pie when I got home this afternoon to serve after dinner tonight (family coming over). DH told them to come a half-hour earlier than I had intended. Dinner is cooking in the crock but, but now I won't have enough time to bake the pie and have it cool to serve. I need a quick recipe that either can be eaten while it's still hot or maybe no-bake. Also, there won't be much time for it to chill either. Any ideas??? TIA!
 
You don't have 2 crocks do you? The pumpkin job recipe shared here is really good warm with vanilla ice cream. Yum! :teeth:

ETA: Silly me! Do you have apples? You could make an apple pie & serve it warm with ice cream or milk. We like ours that way.
 
Quick Cobbler
2 Tbl sugar
½ c flour
½ c milk
1 tsp baking powder
2 c fruit
Combine all ingredients, except fruit. Grease a 9x9 pan & pour in batter. Add fruit to top & bake at 350 for 40 min.


Can you stop & pick up some fresh strawberries? Expensive this time of year, but another thing we like is to make shortcakes out of Bisquick or Jiffy & then serve with sliced strawberries - or blueberries. The shortcakes don't take very long at all & would cool by the time you want to serve them. BTW - The recipes on the box say to to knead the dough...I never do that. I just mix with the fork, form the shortcakes & plop on the tray to bake. Very easy! And unexpected - so people usually enjoy it more than they otherwise would.

We eat ours with warm shortcakes & pour milk over them, but you could eat them cold with Cool Whip or Reddi-Whip.

quick trifle?
1) pudding, mix or bought
2) lady fingers, macaroon chunks, biscotti bits or any soft cookie that pairs up with yr pudding
3) for lady fingers or macaroons--sprinkle on some good sherry or if you have say, a vanilla pudding, sprinkle with pineapple juice--& yep, it can copme from a fruit can
4) cool whip or whipping cream

begining with lady fingers (or other) layer, top with whiped cream dollop

or layer all in individual glasses (or even just pudd & cream or pudd & cookies) & top w/ taste coordinating chopped candy or a bought fancy cookie like Piroulines

got a bread mix like banana bread? gingerbread/ blueberry?
if you can, slice it in two lengthwise & fill with a coordinating jam or with a mixture of cream cheese, vanilla & powdered sugar(mixed thoroughly)
sprinkle powdered sugar on top & place on lovely serving plate--

I have been dying for a reason to try this one...

Pineapple Angel Lush

1 pkg. (4 srv) vanilla flavor instant pudding
1 can (20oz) Crushed Pineapple in juice, undrained
1 cup thawed whipped topping
1 pkg (10oz) prepared round angel food cake (I would get a storebought one)
10 small strawberries

Mix dry pudding mix and pineapple with juice in medium bowl. Gently stir in whipped topping.

Cut cake horizontally into 3 layers.

Place bottom cake layer, cut side up, on serving plate. Spread 1 1/3 cups of the pudding mixture onto cake layer; cover with middle cake layer. Spread 1 cup of the pudding mixture onto middle cake layer; top with remaining cake layer. Spread with remaining pudding mixture. Top with strawberries. Refrigerate 1 hour or until ready to serve.
 
We like Dump Cake.

One large can of either Cherry or Apple pie filling
Pour into a 9x13 pan.
Pour a white or yellow cake mix on top.
Slice a stick of butter and put on top of cake mix. (Cut into about 20 slices)
Bake at 350 for 30 minutes.
It's really good warm or cold.
 
how about a fruit crumble? Rub together equal parts of butter/margarine and flour to the breadcrumb stage then add sugar to taste. spread over prepared* fruit in an oven proof dish and cook until the topping is golden brown and the fruit heated through. Serve with cream, ice cream or yoghurt.

To spice it up, add cinnamon to the crumble mix if you are making apple crumble, or finely grated orange/lemon zest for crumbles made with berries. Or add chopped nuts, toasted sesame seeds or sultanas/dried cheeries etc.

*Fruit should be prepared by part cokking in suger/water so they produce a puree type juice. Don't overcook, the fruit should still keep its shape. Also you could do this with tinned pie filling instead of fresh fruit.
