This is sooooo good! And the flavoring possibilities are endless...

German Chocolate Cake Flax Bread

dry
===
2 cups flax meal
1/2 cup chopped pecans
1/2 cup ground unsweetened coconut
1/2c Splenda (I used 1/4 tsp. liquid stevia instead)
1 tsp baking powder
1 tsp baking soda

wet
===
5 eggs (beaten)
8T DaVinci German Chocolate Cake
5T vegetable oil (whatever kind you want to use)

pre-heat oven to 350F

mix together all dry ingredients in a bowl, then in a separate bowl, mix all
wet ingredients. fold dry ingredients into wet and mix well

immediately transfer batter to Pam/etc-sprayed loaf pan

bake at 350F for 35min. or until it passes the knife/toothpick/etc. test.

remove from pan immediately and cool before slicing

The original recipe (see it here) suggested using banana syrup and
chopped walnuts (1 cup, no coconut) for a banana bread. I've also seen the suggestion to use a jar of banana baby food instead of a banana for a low-carb, low-glycemic banana bread. Somebody else added some carrots and spices for a carrot cake/bread.

It's good, though, and full of fiber!
