Would you do this?

Yep. In a heartbeat! I get what you're wanting from this trip: escaping family stress and just enjoying life with your husband for a few days without bleeding money. And I don't blame you for wanting to be at disney... its my happy place too. In fact, I'd even consider an All-Star and use the extra money for meals at the deluxes' restaurants. :)

Believe me I checked the rates at All Stars. We’ve never stayed there. They’re definitely cheaper but I like having the Skyliner at Pop. We’re not big on expensive meals. My husband’s a picky eater so we usually just do quick service. I don’t care. As long as I don’t have to cook or wash dishes, I’m happy.

My husband and I desperately want to get away. We need a break away from all the drama with his mother. This is a last minute trip, thinking late August, so don’t really have much to spend so we’re trying to keep the cost down. We’re thinking 5 nights at Pop Century, which we have stayed at several times, and NO park tickets. Have never done this before but I think I’m totally ok with it. I love the idea of just being able to do whatever we want. I want to just relax, get up whenever, lots of pool time, explore all the resorts, do a lot of browsing, maybe a little shopping, really take the time to see Disney Springs, catch a couple movies, play some mini golf. Just enjoy being in the bubble. Other choice is just get 2 day park tickets and go to the Magic Kingdom and Epcot but that alone would cost us another $500.

We've done a weekend in Orlando, where the goal was to eat and shop at DS. No park tickets. Was very relaxing. (we stayed off site, at a hotel within walking distance from DS)

We're doing a 'spur of the moment' trip in August (19th-28th) to Belize. A few days ago, DH said 'let's go on a getaway, just you and me." I was thinking, a weekend in St Augustine at a B&B or something. Asked on a thread here; with recommendations, I decided on a cabin in TN mountains. Same day, DH comes home and goes "let's go to Cuba", and starts making plans. Decides it's a lot of trouble, and thus, a trip to Belize. Total time from first mention to today was less than a week. Went from TN to Belize, planned and reserved in less than 2 days, lol.

What about renting a last minute time share in a nice walkable city? Everything you want - walkable/no driving, nice resort amenities, entertainment and dining right by you.

If it were me, and it was driveable, with the exchange rate, I'd book the Embassy Suites in Niagara Falls - it's exactly what you're looking for. Take the buses around, do the boat ride, sit and gaze at the beautiful falls, have breakfast and happy hour included in the resort, etc...you only need 3 days tops, not 5, so if it's pricier, it's doable...

PS - It's gonna be peak hurricane season in FL, so even if it wasn't stupid hot/humid, I'd rather not plan a vacay that 25% might get ruined by weather...

If you're looking to save money (and not go to the parks), what about VRBO or something like that? You could have meals in, and many have a private pool.

Sorry, didn't realize there were family issues or wouldn't have suggested renting points.

I say, go for it! DD28 and I stayed at POP last summer and really enjoyed it. I think we were in the 80s building (90s?) so it was shorter to get off a bus and walk across the parking lot than walk thru the resort to the bus stop at night, when we were park-weary. It was a nice walk to the Skyliner, and we enjoyed hanging out at the pool bar. Totally understand that you want to be in "the bubble" and not rent a car, and now that there are queen beds in the rooms, well, what's not to love? You have a price that you are satisfied with (although... do you have Disney+ and are there any deals there? Or thru Expedia or wherever- although I prefer to go thru Disney/a Disney travel agent for renting a Disney room). Most families are in the parks most of the day, so the pools aren't crazy busy and noisy if that's where you like to hang out, and there are tons of "free" Disney-related things to do if you want to have a taste of Disney without the cost of the parks. It sounds like you are going to have a wonderful break!
