Just keep in mind that the restaurants around the World Showcase lagoon vary with regard to how authentic they are with respect to the national cuisine they're supposed to be representing. Some of it is toned down, for American tastes, while some of it isn't.
FWIW, I am most looking forward to shawarma served at the Tangierine Cafe in Morocco. FWIR, a great number of people now consider it the best CS available at the World Showcase. My own favorite, in terms of recognizably "worldwide" cuisine, is the red cabbage and sausage at Biergarten, the escargots at Chefs de France, and the occasions when Rose and Crown serves curry.
