World ShowCase All in One Day

Our first trip with our girls was in 2014 when our oldest was almost 6 and youngest was 18 months. We just didn't feel the draw. We visited EPCOT one day, spending most of our time in Future World, popping into WS and were done. Fast forward to Thanksgiving 2015 and we fell in love. It was a late afternoon/early evening hop to EPCOT early on in the trip and we wandered back to WS. The girls were given Duffy paper fans and became obsessed with the KidCOT stations. We followed behind them with the stroller as they skipped from country to country. My husband, BIL and I sipped on various beers and specialty cocktails as we watched them explore shops and buildings, breaking once to dine at Via Napoli. We "discovered" the boat ride in Mexico and the gazebo in the UK, where we watched the British Revolution play a great set while our girls played in the surrounding gardens/maze. The girls waited to visit Aurora in France while we sat on a railing and marveled at the genius of WDW tactics to let us parents relax while our kids were so engaged. We were hooked. We went back at least once more that trip, and now always plan multiple days at EPCOT. We definitely dedicate at least one morning to Future World for Soarin', TT, Living with the Land, Mission Space, Nemo, etc., character meets like the Fab Five, Baymax, Joy & Sadness, Chip & Dale, then head back to WS for a skim through the countries. We usually head back on a different evening for dinner and more time in WS, and pay attention to wait times of FW attractions in case we want to catch another ride again, if we haven't snagged an additional FP to one of them while in our morning park.
 
Was just curious of how people spend their day and time in World Showcase if they only do one day at Epcot.
We are going for the 1st time next month. On trips past we have skipped it because my Husband and 3 1/2 year old didn't have any interest. I have wanted to go for years, so basically I'm forcing them to go. But between all the yummy snacks, meeting all the princesses in the WS and the Flower Festival, I'm confident they will enjoy it. We are planning 1 full day. Getting there at Rope drop to ride Frozen, and taking a break in the afternoon at the hotel and then going back to see illuminations at night.
 
I think every family is different, our way is we spend one day there, from 11am until dinner. We just go at our own pace and when someone wants to take a break, we take it. It’s our most relaxing day of our Disney trip so we all look forward to it. My kids are 13 and 11 and LOVE it and have since they were little. We eat dinner then head into Future World for a few rides and leave.
 

You COULD do it in one day. But, to get the most out of it, I recommend hoppers and doing it over multiple days. We find that spending time at 2-3 countries per visit helps slow us down and appreciate it more. If we try to do it all in one day, we find ourselves rushing through the last half.
 
We love World Showcase and are there multiple times a trip for hours... Having traveled to many of these countries, lived in London (working in Parliament) it's awesome to get to kind of relive those moments and keep the memories alive. (From eating gelato in Venice, to crepes in France, to fish and chips in England... very food driven.) I am excited to take my children to Italy, France, England, Ireland, and beyond, but for right now, this is a chance to expose them early on to new sights and sounds from our life here in New England. I love the food, I love the pace, I love the music. I am sad that Off Kilter is no longer an option, they were maybe the highlight of each day. We often start our days at another park, then work our way back to the resort for a bit, and end the day with dinner in the World Showcase.
