Working During Vacation

Good afternoon everyone! I'm just planning our trip for next September (from Canada - it's been a long time coming), and we're planning on going for two weeks. I'll take vacation and my wife will be on maternity leave.

However, I've been thinking, since I work remotely, I might like to take an extra week down there, and work during the day remotely and then go off to explore in the evening.

Has anyone done this? We'll have a 3 year old and 6 month old with my wife while I'm working during the day. Any stories, tips, thoughts?
 
The internet in the hotels can be spotty. It may not be reliable enough depending on what you do for work.
How will your 3 year old do with being away from their bed and toys for 3 weeks? That is a lot of time away from what they know. Are they a good eater? Or do you need a DVC villa where you can cook a variety of what they do like?
how does you wife feel about wrangling 2 small kids for a week to keep them entertained away from where you are working?
