Been readin though recipes threads.....omg they sound good....wondering if there are any for creamed spinach? any thoughts?
 
I'd love to see a low-carb creamed spinach recipe.
 
I was thinking low carb......you mean there isn't? lol. I figured spinach was ok with atkins and cream is as well............am I wrong I could live on that stuff!
 

I would make up a sauce made with heavy cream and some shredded cheese - melt it all together and pour it over the spinach! Yum!! :teeth:
 
That sounds like a good idea, Rhonda.

I was thinking heavy cream with xantham gum to thicken it, then I thought if you used a blender you might turn the cream to butter. I suppose you could dissolve xantham gum in a little bit of broth then mix in the heavy cream and make the creamed spinach that way, too.
 
Okay, Dana Carpender to the rescue:

1 package (10 ounces) frozen, chopped spinach, thawed
1/4 cup heavy cream
1/4 cup grated parmesan cheese
1 clove garlic, crushed

Put all the ingredients in a heavy bottomed saucepan over medium low heat and simmer for 7 to 8 minutes.

Yield: 3 servings, each containing 5 grams of carbohydrates and 3 grams of fiber for a total of 2 grams of usable carbs and 6 grams of protein.
