I don't know about general guest feedback, though I do recall an instance when a VIG's feedback (supposedly) resulted in a dramatic change to an attraction particularly pertinent to Stitch.
The attraction was Alien Encounter and the VIG was Michael Eisner.
We saw a soft opening of this during
MVMCP back '94. The preshow with Skippy and SIR, (or whatever he was called at the point) was voiced by Phil Hartman, was actually cute. The show was good but significantly different from the final iteration.
Apparently, Mikey came to see it some time before the "official" opening date, felt that it wasn't scary at all, and sent the Imagineers back to the drawing board.
The second interation was vastly different from preshow to finish. (If not in major story elements, definitely in tone.) The preshow itself, with somebody new (I can't remember who) doing SIR, became omenous and the scare factor of the show itself was ratcheted up SEVERAL notches. My wife saw it once after the revisions (summer '95) and that was enough for her. We had been waiting in line with a family and told them that the last time we saw it we didn't find it particularly scary.

I sat next to the little boy--at one point he reached over, grabbed my hand, and didn't let go until it was all over. I rode it after that with my BIL, but my wife was done.
So there's certainly precedent for dramatic revisions between soft openings and "official" openings--and even with that particular attraction building and system.
As for the Michael Eisner story, I don't remember where I heard it....it could be a myth. But I know he was there when we were. We saw him talking to
Arnold Schwarzenegger at the Beach Club. (Arnold was there for the opening of Planet Hollywood.)
