We want to spend some time at US, but only to see the Harry Potter side. Mainly. And we would like to go to Emerils for lunch. Though not sure what order to do these in.

But then we want to get back to Downtown Disney to go to Disneyquest for a bit. And maybe dinner at Paradisio37. Is this too much?

What is the traveling distance between US and DTD? And is a taxi our best mode of trans? As far as speed?

It shouldn't be too much if you only want to see HP and not the rest of IOA. If you were interested in staying at IOA for the day, you might be tired by dinner time. A cab would be your best bet so you can come and go as you please. The distance isn't far...only about 15 minutes by car.

But we may also want to Mall of Millenia. Not all 3 in one day, but if we throw that in, which 2 should we do in a day. Taking into account which are closest to each other.
