Hello everyone! 

I am Jess, and I have been a long time reader on the disboards. I haven't contributed much, since I haven't been to any Disney experience since 2001! With all of the changes since then, it feels like this is my first time visiting the world.
My family of 4 (the husband (D), kid 1 (Monster), kid 2 (Newt) and I) actually had 2 big WDW trips planned 6 months ago. 1 over Halloween 2016, which was cancelled the night before departure due to the entire family getting the flu... So. Many. Tears.
Mostly from me, kids weren't really bothered by it (they are young and don't know what they are missing).
The other trip was a large family trip planned for end of January 2017. That trip was also cancelled due to extended family medical conditions. And my kids have decided that, although they have never tried, they are not flying on an airplane. We live in Oklahoma and I am not a fan of road trips, so flying is the only way we are getting to the world!
Guess who purchased plane tickets from Southwest for BOTH of those trips right when we started planning... That's right,
this girl. So, I have been desperately trying to find a way to use those flight tickets for my husband and I. Since we prepaid for so many things for the WDW trip, it actually ends up being a lesser expensive vacation option. And since the kids won't fly and don't want to go, that means it's a trip to the world for just D (the hubs) and I! SAY WHAT
?!? Just a side note: D and I are extremely lucky if we get 1 date night a year.... so going away for a few days is not even on my radar.
Ok enough background! This trip will have the following cast:
ME!!!

The husband (D)!!

We are both software engineers
and work ridiculously long hours. We rarely get a weekend or holiday off, so taking a few days off work for vacation is a big deal.
So here is the plan!! It is either underwhelming or unrealistic. Time will tell which.
Tuesday, Jan 24:
- Arrive in MCO at 1:30 pm. Take ME to POFQ.
- Hit up HS with a couple evening fastpasses.
- Edit: Added a late night Beaches and Cream ADR! Woot woot!
Wednesday, Jan 25:
- Universal Studios day!
- Not sure how late we will be there. If we leave US in the afternoon, then we will hit up MK in the evening for extended hours.
- No dining plans, hoping to find some good "on your feet" food.
Thursday, Jan 26:
- Spending the first half of the day at AK
- Early dinner ADR at 'Ohana
- Visit MK after our early dinner
Friday, Jan 27:
- Most of the day at Epcot
- Afternoon BierGarten ADR.
- Back to MK in the evening
Saturday, Jan 28:
- Fly back home at a painfully early time.
And that is it! It is not a long trip for most on these boards, but considering we are not bringing our little beasts, it will feel long. But a refreshing break from reality for sure!
My concern with my plans is that I am not allowing a whole lot of time for MK. I would also like to include some time at Disney Springs to pause and have a couple cocktails.
D and I are fairly athletic and require very little sleep (our careers and kids have turned us in to robots). So we are excited to "go go go" while on this trip.

[Wanted to add a side note about how AWESOME Disney is. When we had to cancel our October trip, we had many ADRs and 2 sets of 5 tickets for Halloween Parties. Disney refunded EVERYTHING, which they totally were not required to do. It was pretty amaze-balls and had an influence on our decision to try again
