Will I have trouble getting PS while we are there?

Our plan is to eat breakfast in our room and do counter service for lunch. We usually like to sit down for a meal at dinner, but I don't know what time we will want to eat or what we'll be in the mood for until that day. I think we would like to eat at Ohanas and Whispering Canyon (for the kids) and maybe some places in Epcot.

I know July is a very busy month, but if I call in the morning or sometime during the day will we be able to get PS for that evening if we are flexible about the times (we are normally late eaters)?

I think you won't have a problem if you aren't looking at one of the ultra-popular places. Have a list of restaurants you want to try and remember off-peak is king. Even if all PS times are taken you still might be able to get in if you show up at 930pm.

I know that all PS were taken at the California Grill but when we showed up to watch the fireworks at 9pm we could have easily gotten a table. This was the Sunday before Memorial Day.

You are probably hosed for anything on Saturday nights in July, however.
 
If you're going during a holiday time (like July 4th) you might want to think about making PS at those places (O'Hana & WCC) because they may fill up on you, especially if you're thinking about a specific time. This happened to us over President's day weekend 2003 and it wasn't as busy as this year at the same time.
 
I would try to make some PS's before leaving home. I understand that July is one of the busiest months at WDW. When we went in May of this year, I had made my PS ahead of time for 5:30-6:00 each day because I knew we would be ready for a break from all the walking. Even in May (not a super busy time), when I tried to make some changes to my PS after my arrival, most of the places or times I was trying to change to were unavailable; some places had NO seating left at all. If there are places you have your heart set on eating, I would try to make PS before your trip.

Well to add to what I said earlier, I've been having quite a difficult time making PSs at a lot of places during this trip. Since I had to reschedlue our trip and then reschedule my original PSs (which I couldn't get a lot of the one's I originally made), if that makes sense I've been trying to make some within the past week, or even within a few days or even on the same day (waiting on cancels) and haven't been able to get in A LOT of places. Some did have availability at either 5:15 or 9:30 and nothing in between.

Tough ones to get into are as follows:
O'Hana, 1900 Pk Fare dinner, CA Grille, WCC & Chef Mickey's - I couldn't get any of these--even O'Hana for breakfast tomorrow was booked.

I'd suggest if you want to eat somewhere particular, make the PS!! Better to have them than not to. I usually do make PSs for every trip especially if I want to go to that restaurant.
