Hi,
Going to WDW on July 12th and love taking pics. had no classes (though I want some) and just use my judgement, now, should I be worried about ISo, shutter speed and everything else.

Nighttime and fireworks never work for me.

My camera has a landscape mode and I use that for scenrey pics.

I have the Evolt 500.

How should I know what setting would be best if I'm on the jungle cruise (Nothing inside with a flash).

The best thing is to turn your ISO level up at night. Since you have a DSLR, you can turn it up higher than a PnS without suffering from noise levels quite as much. 800 will probably be fine, 1600 might be pushing it - try taking a few photos around your house in low light to see how they look at those levels.

You can also use your fastest lens, ie, the one with the lowest F-stop available. I'm not very familiar with what's available for the Olympus DSLR line, but most manufacturers have a pretty fast and affordable 50mm lens (usually F1.4 or F1.8), this would be your best bet.

Jungle Cruise will be pretty difficult even with an F1.4 lens and ISO 1600. I've done it more at night than during the day in my past few trips, and it's pretty dark. I'm sure it can be done, but it'll be tough and you'll probably get a lot more throwaways than keepers. You'll probably want shutter priority mode and set it to as fast as you can without it underexposing, or alternately, you can use aperture priority and set it to your lens' fastest F-stop.

For fireworks, the best trick is to use a tripod and a remote shutter release and try bulb mode. There was a recent thread with lots of tips and examples, if you can't find it I'm sure we can come up with a link for you.
