Does anyone have a recipe for wild rice that includes dried apricots & is served cold, like a salad?
There was a small bakery that also did catering near the place I used to work. They used to have this wonderful wild rice dish that had dried apricots & maybe dried cherries and almonds in it. (It's been a while since I've had it.) It may have been their own unique recipe, but I wondered if anyone had ever had anything like it. I'm thinking about trying it, but can't even begin to imagine what kind of "dressing" would have been on it! Maybe a balsamic??
