We just returned from Daytona and drove through Ormond Beach to get there.
Ormond is very quiet and it seems IIRC there were many dunes before the beach so it was hard to see the beach from the road. It seemed to me to be very residential and a place for people to retire.
Daytona on the other hand is close to all the action. We stayed at the Fairfield Ocean Walk which is a time share. It is a huge hotel, brand new with a great pool and it fronts a no drive beach. It is within walking distance to several restaurants and the main tourist area.
You can find great deals on owners selling their points for this resort or you can sign up through Fairfield for a special deal. I think however they put you at the Holiday Inn and you tour the Oceanwalk.
You can also find quieter areas south of Daytona all the way down to Ponce Inlet (where the lighthouse is).
It is only my preference but I would choose Daytona for a short visit or maybe a condo south of the main tourist area where the beach will not be so crowded.
We never visited New Syrmna Beach but have heard that is nice too.

Also, you can think about doing the Daytona 500 Drive with Kyle Petty $130-(IIRC) See World Largest Harley Davidson Store, Arlen Ness Store (My DH's favorite) we saw Titon Rocket Launch from Balcony from Cape Canaveral so definately do a visit there.
