Which would you pick from these options?

I would chose POFQ depending on your transportation situation. My husband and I always go to POFQ since we don't have kids with us but we are in our early 60's and like peace and quiet a little more, We always request a King room facing the river and it's amazing! Huge room with such a beautiful view! Whatever you chose, have a fantastic time!
 

I’ve stayed at both POFQ and Pop as adult only trips. My decision is usually made based on the price difference at the time and the rate per night. Never stayed at Swan/Dolphin. I’d weigh the price difference vs. amenities you care about/would use. For example, I view them as all equal when it comes to dining because we could care less about a lounge option and none of the TS restaurants at Swan/Dolphin are high on our lists. In contrast, indoor hallways, especially in Dec or Jan, are a plus for me because I have been there several times when it’s shockingly cold, so that’s something I’d judge worthy of paying a bit more. Be sure to include parking costs into your mat since you said you would have car. When traveling with my partner, we spend very,very little time in the room, which edges me towards Pop because why spend more than needed. But sometimes when I travel solo, I want to hang out in the room or at the resort more, so then I might opt for a nicer place.

Basically, I’m suggesting you look at the price vs what you get and will use. It’s easy to suggest the nicer places because they tend to be nicer, but if all the nicer doesn’t matter to you, then maybe saving money is a better choice.

I have stayed at all of those options, and in my opinion, Pop can't be beaten! The Skyliner to Epcot and Hollywood Studios is also great for an adults trip. I would pay the extra few dollars a night to get a preferred room so you're closer to the main check in building and the busses.
 
Based on my experience, I'd go (back) to POFQ. Loved the smaller size, the food court was good, the beignets were great, and overall it was just a really nice experience. PORiverside isn't too far away if you want to check that out. Not sure if they are running the boat to Disney Springs but that's always an option for dining and shopping for an afternoon.

Also bring a light or medium jacket/hoodie because it's surprisingly chilly here in January in the mornings and evenings.
 
If pricing is the same I would probably go with Swan/Dolphin for convenience of walking to Epcot and Skyliner. My second choice (and first if it is much less $) would be POFQ.
while Pop could save you some $, I think staying at the other two would offer more of an adult vacation vibe.
 
Here’s my two cents from a lover of the luxurious travel.
In our newly married state, after our first Poly concierge trip, we both had the Disney bug, but not the means to go deluxe.
So, it was the moderates and off site for a bit until we got a great deal to stay at the Dolphin. OMG! We were soooo impressed!
The rooms, the beds, even the towels...heavenly! :cloud9:
After that, whenever money was tight, or trying to get an extra trip in with our APs, it was SWAN/DOLPHIN🥰❣️

Just in case you did not know, self parking at Swan is $29 + tax per day and valet is $39 + tax per day. The resort fee is currently $35 + tax per day for internet, fitness club access and bottled water. These fees are all on top of your room cost and tax. It can really add up depending on your budget.

Self parking at POFQ is $20/day.

Another vote for POFQ here. Love the resort and it has that wonderful Disney themed feel.

The Swolphin, while nice and in a great location, lacks the Disney feel. It's more of a "nice hotel in Anywhere, USA" kind of feel. If that's okay with you and you'd like the location, then go for it.
