DH just got notified that he will be changing hours at work. The original plan was February 28-March 6. Now debating between February 15-22, February 22-29 or March 28-April 4. The kids don't know we are going and I have no problem with pulling them out of school for 6 or 7 days so that doesn't come into play.

I'd pick February 22-29. You'll miss both President's Day holiday and the Princess Half weekend, and also miss the insane spring break crowds.

FYI, the Princess Half weekend is 2/21-2/23 in 2020, so they’d get a bit of it.

Also OP, Mardi Gras is 2/25 in 2020... something else to keep an eye on.

I'd do March 28-April 4 because the weather will likely be warmer and for a weeklong trip I'd want some relaxing pool time.

Trying to pick a "less crowded" week I say is a futile experience. Now it's all about how you tour the parks and use FP that matters now.

I would pick March 28-April 4. If you go in February I would check the refurb lists.
