I vote for the Cobb Salad at the Brown Derby and the Beef Teriyaki Salad at Kona Cafe. I also need to give the tomato, cucumber and red onion salad at Jiko an honorable mention even though it is an appitizer salad and not an entre. It's even really beautiful to look at...
Well, it's not a main dish salad but it is the best salad at WDW, IMO, because they grow some of the veggies right there. And the dressing is to die for! Surprise - it's Garden Grill in Epcot.
I really enjoyed the Caesar Salads at both Mama Melrose and Yachtsman Steakhouse.
And silly as it sounds, for some reason the side salads at Pizza Planet always seem to hit the spot for me.
There's a salad at Le Cellier that's amazing. They have an entree one at lunch but I think only appetizer sized at diner. It's field greens with blue cheese, walnuts, and this amazing dressing. I have it every time.
We liked the salads at Earl of Sandwich in Downtown Disney. My whole family was impressed and they are all kind of food snobs...and hard to impress. It was reasonably priced too....

The Earl of Sandwich at DTD has great salads at reasonable prices. My favorite is the Chicken Salad on a bed of field greens. Ask for the Champagne Vinegrette to pour over the field greens after you have eaten the chicken salad! YUMMMMM!!!!
