Do the moderate resorts have family suites to fit a family of 7? Family of 6 if they don't count our 2 year old...I know some of the value resorts will fit us.
I saw on the Disney website that at the Yacht Club resort that a standard room with standard view sleeps 5. It also says that for an additional adult it's $25 each night. Does this mean we could stay here and pay the $25 extra each night which would make 6 and would our 2 yo still count as an infant? I hope this makes sense...

Nope. Max occupancy is one thing, the extra adult charge is something else.
For example, if you and another adult were staying in a room alone, the room rate would be $x per night. If a third adult joined the two of you, it'd be $x+25 per night.
Max room occupancy is based on fire codes, emergency procedures, and other factors that is an upper cap. So, while you could get 5 adults in that room (theoretically) by paying an extra $75 per night, you could not get a sixth in there at all.
The cabin's would be the Mod level it fits 6+child under 3. Then you would need to bump up or down a level. AOA is a brand new Value resort and will fit 6+ child under 3. Not sure which Deluxe have rooms for 6 + child under 3. I am sure others may have more info on Deluxe.
What would work best for you depends on your budget. The junior suite at CSR is more expensive than booking two standard rooms at that resort. As PPs have mentioned, All Stars Music and the new Art of Animation resorts have family suites that would fit 6 plus a child under 3. The cabins at Fort Wilderness also would fit your family.
One option that hasn't been mentioned yet is renting points to stay at a Disney Vacation Club resort. Your family would fit in a 2 bedroom villa. You can rent points from DVC members for much less than what it would cost for you to book one of these villas through WDW.
