Which plan looks better for our park days?

We will be at WDW staying at POR from June 11th through the 18th. It will be myself, my dh, my 18 yo ds, and my 14 yo dd. We do not have park hoppers, but we do have Genie +.

First option:
Day 1-after arrival (flight gets in at 11:10) spend the afternoon/evening at MK
Day 2-AK (probably morning/maybe early afternoon)
Day 3-DHS (morning and evening w/afternoon break)
Day 4-Epcot (morning and evening w/afternoon break)
Day 5-Resort/Disney Springs day
Day 6-MK (morning and evening w/afternoon break)
Day 7-Epcot (morning and evening w/afternoon break)
Day 8-MK until we have to leave for departure (flight at 4:15)

Second option:

Does it matter with the festival going on if we go to Epcot on Monday, or is Tuesday better?
 
Is your only concern which day to do EPCOT? I dont think a Monday or Tuesday would be a huge difference. Now if it were the weekend that would be a different story.

Also, a tip. Be sure to keep stacking those LL at MK for your arrival day. You could have 3 ready to go by the time you reach the park that afternoon.

I think avoiding epcot on a weekend is usually pretty wise so having your Epcot days on friday isn't a deal breaker IMO. I don't know what summer will be like this year but in prior years, summer has not been as crowded as other seasons. Fingers crossed it's not like it's been as of late. Sounds like an awesome trip!
 
Can I offer a third option?

Personally, I get super bored when I have an entire day off. I'd recommend two half-days on Day 3 and Day 6 rather than a full day off on Day 5.
