Which park, which day?

Visiting June 25 - July 2. This is our plan:
Wednesday - arrival
Thursday - AK
Friday - DHS
Saturday - off
Sunday - MK (already bought dated ticket)
Monday - Epcot
Tuesday - off
Wednesday - departure

Would you do anything differently?

I assume you're staying offsite. Just my opinion and FAR from an "expert", I personally wouldn't "start" with AK. I'd probably swap AK & DHS with my thinking being DHS might be busier on a Friday.

EPCOT is probably Extended Evening Hours on Monday, I don't know if that leads to more crowds the later part of the day. But I don't know when to move it to except maybe Tuesday? Of course, the time of the departure plays a factor too.

I like the day off plan. The next thing I'd take into consideration is what the arrival time is. Wednesday should be MK EEH. If I could be at the park by say 1p, I'd consider doing that on arrival day to take advantage of the EEH.
