It's a very difficult question to answer without knowing you or what you're looking for in a resort. Many factors could come in to play - are you a family or a couple? Will you have transport or be relying on buses? Which are your favourite parks? Without knowing any of this, I can only give you opinions based on my own experience.
Having stayed at both, from my point of view:
Animal Kingdom Lodge is more stunning to look at and is very rustic (but in a grand way). Being able to see the animals from your room and the various viewing areas is also a great novelty factor. The pools (both the main lodge and Kidani village) are great, particularly the splash area for the kids. AKL can feel quite far out from all of the parks (with the exception, obviously, of Animal Kingdom) and getting to DTD particularly can be a trek.
Beach Club is less grand and less 'posh' feeling, however it has that 'beachy' charm. The pool is fabulous, however if you have small children, it can be hard to keep an eye on them as it is so spread out. I dislike the smell from Cape May in the evenings (they have a seafood buffet/clam bake every night) and, for that reason, I try to avoid the lobby area during dinner times. It is within walking distance fo tow of the parks, though, and that is a bonus.
For our family, though, the Beach Club wins hands down, purely for location. We love the Boardwalk area, particulary in the evenings, and the ability to walk to our two favourite parks, Epcot and Hollywood Studios. There are lots of options for eating and drinking, without having to drive or rely on Disney transportation (which can be sketchy at the best of times).
So, if it was MY choice, I would choose Beach Club
