Well if you are into Mayan temples, Cozumel has tours (not my cup of tea - wife booked it). When we went to Grand Cayman, we took a taxi to a beach bar and had the best time of that particular cruise.

Cozumel we did an ATV jungle tour, which was awesome.

Grand Cayman we did Stingray City, which was also awesome.

They're both giant tourist traps but still super fun.

Cayman has better snorkeling excursions. I think the shopping is better quality and more friendly too. GC is amazingly beautiful. It’s the only stop that I really like in the Western Caribbean.

My family just did simple beach days in both ports and we were happy

GC - Beautiful beaches and good snorkeling. Nice shopping area at the cruise terminal. Stingray city. Tender port that may be missed due to winds and currents.
Cozumel - Nice beaches and okay snorkeling. A wide variety of all-inclusive beach clubs. Some small Mayan ruins. Shopping area at the port.

If you're looking at a 5nt that does one or the other, with Grand Cayman being a tender port, it's much more likely than Cozumel to be skipped due to weather...not sure how often that happens, but you may want the Cozumel one instead to almost be guaranteed to make that port. (Can't say always..things like hurricanes can change cruise destinations.)

Grand Cayman, overall, is just a nicer island and more things to do.
