Which days would you recommend in August?

We have a conference Aug 4-8 (mon-fri) but would like to take advantage of the 3 day 1 park ticket deal. We can stay on site to take advantage of EE but we def need to be at the conference hotel Sun-Thurs nights. There's a last event friday night that we need to be at, but can leave after. We also have a "free day" on monday of the conference after 12pm, so we could feasibly go to a park that day, but wouldn't arrive until after 12:30.

Which days would you recommend which parks between Friday, Saturday, Sunday, and Monday after 12pm before or Saturday, Sunday, and Monday after? Or a mix of come early/stay late? I was thinking maybe EP sunday before, DHS monday, and AK Saturday after. We last went to WDW in 2020 and our favorite parks are EP and AK (and we like to do all the things there). DHS is the most underwhelming to us since we have most things equal to or better at DLR or we're just not interested in experiencing them again. Slinky dog, rockin roller coaster, and beauty & the beast are really the only things we're interested in at DHS.
 
One thing to consider with an august trip is afternoon thunderstorms. We have had plenty of clear August days, but two with drenching downpours (and scary lightning). We did an afternoon day at AK, but didn’t get to half the park because the skies opened up on us. We got some fun character meets in and had a great after-rain safari, but our other plans got completely thrown off with the 6 pm closing. (We don’t stop for rain, but take shelter when there is lightning.)
