Where to eat with 12 yr old AND are restaurants still open after the rides close?

We are spending one day at US and one day at IOA.
Rather than go back to WDW for dinner (we are staying in WDW) where should we go to eat dinner at Universal?

Also, where is the Nascar Cafe located?
 
NASCAR is in CityWalk on the US side. You can't miss it when you go to the parks. It is a good place to take a 12 year old, especially a boy.
 
There is a lake in the middle of everything. Assuming you are comming in from parking/shuttle: you walk in in the middle of citywalk, at 9 o'clock on a dial. Nascar is to the right, at 7. USF is at 5. IOA is at 1. Hard Rock Cafe is across the water at 3 oclock, between IOA and USF. The hard rock Hotel is at 6 oclock, off a ways. Confisco's in IOA is not too expensive, good food, and the character show from noon to 2 is pretty fun. Go in IOA, through the little village, and it's the last building on the right just before you head towards Whoville. Each park is also designed in a circle of sorts, with little areas (islands) of different themes. If you were to look at it from above, with citywalk at the bottom, and the parks up at the top, it would sort of look like Mickey Mouse, one big cirlce with 2 little ones up top. (oops!)
 
City walk stuff is open late, after parks close. Restaurants inside may actually close before the parks do.
