We will be staying at Grand Floridian. If my return flight is at 11:30 am, what time will I be required to board the Magical Express? What time if my flight is at 12:10 pm? Thanks!

Between 2 hours 45 minutes and 3 hours 15 minutes before. Each resort has stops every half hour, it depends on GF's time.
